Ingredients:
2 Cups Yogurt
2 Carrots Grated
Fist Full Coriander (finely chopped)
3 Carrots
2 Sprigs Curry Leaves
1/4 Tsp Mustard seeds
1/2 Tsp Cumin Seeds
2 Dried Red Chilies
1/4 Tsp Asafoetida
1/2 Cup Kara Boondi
Salt as per taste
Oil as required
Prep Up:
- Prepare vadas or use left over vadas
- Bring water to boil
- Grate carrots
- Finely chop coriander
Method:
- Whisk the yogurt with salt and refrigerate.
- Heat 2 tbsp oil in a fry pan add mustard seeds, cumin, asafoetida and dried chilies fry a bit till mustard crackles add curry leaves add this tempering to the yogurt and reserve.
- In a large bowl add lukewarm water dip the vadas in water and squeeze excess water out place the vadas in a serving dish.
- Pour yogurt over the vadas add grated carrots and coriander over the vadas sprinkle the boondi serve chilled...great summer snack or can be served as a appetizer....Enjoy...:)
