Sometimes i receive weird requests for chicken kabab recipes mentioning a hotel or restaurant who has perfected their recipe I can no where fall in that category of recreating restaurant style food at home...Home Food is SOul Food...I prepare chicken kababs in 3 variations you'll get to see all the other 2  fusion concoctions soon on this blog...
Demo Video Recipe

1 Kilo Chicken
1 1/2 Cups Yogurt
1/4 + 1/4 Tsp Turmeric Powder
2 1/2 Tbsp Chilly Powder
1 Tbsp Garam Masala or Tandoori Chicken Masala
1/2 Tsp Coriander Powder
1 Tbsp Ginger and Garlic Paste
1 Egg
Red food color
1 Tbsp Maida/All purpose flour
1 Tbsp Corn Flour
1/2 Lime
Salt as per taste
Oil for frying

  • First Stage marination: in a mixing bowl add 1 Kilo Chicken, 1 1/2 Cups Yogurt, 1/4 Tsp Turmeric mix yogurt, lime and turmeric  well into the chiken cover and allow to marinate for 2 hours.
  • Second Stage marination: After 2 hours drain the excess yogurt from the chicken place the chicken in another mixing bowl add 1 Tbsp Ginger and Garlic Paste add garam masala chilly powder and coriander powder to the chicken  mix till well combined cover and refrigerate over night for best juicy kababs or for minimum 3 hours

  • In a bowl mix corn flour maida and 1 tbsp chilly powder add this mixture before frying the chicken.
  • Heat oil in wok on medium flame.
  • Add corn flour, maida mixture and egg to the marinated chicken mix till well combined check and adjust salt as per taste drop the chicken pieces one by one in hot oil fry until light golden drain off excess oil and serve hot along with lime wedges...Enjoy...:)

Tiffin box serves up some scrumptious Gujarati, Rajasthani, Marwari, Sindhi, Maharastrian, Punjabi, Awadhi and Hyderbadi dishes. A variety of tandoor dishes as well as regional biryanis and curry dishes are part of the spread.

Some of their vegetarian signature dishes are achari mushroom, upma, diwani handi, sindhi kadhi, chhole lahori and mirch ka salan. Their signature meaty dishes are nalli nihari, Goan prawn curry, kosha mongsho, mustard fish tikka, prawns koliwada and the Birmingham balti.

Light snacks like idli, pav bhaji, aloo paratha and chaats are also available to please every
palate. You should leave room for their yummy signature desserts like chilli ice-cream, paan icecream

Channa Chaat

we were served both the dabba version and the buffet my taste testing started with channa chat , papadi chaat, dahi vada, moongfali vada aloo dum and pasta salad.

Crunchy papadi chaat and channa chat was chatpata very authentic delhi style cooking dahi vadas was a bit sweet for my taste pallet but was spongy very tasty the tangy chutney drizzled on top was yum peanut vadas was the most unexpected recipes ever crunchy bits of peanuts and crispy vadas tasted yum very summery pasta salad was bursting with flavors of mint coriander and lime its the kind i prepare at home all the time very unusual plate of starters for sure.

Delhi Tiffinbox (contains paneer or murgh makhani as main dish Dhal Chawal Roti and Gulab Jamun) pricing 320 rs for veg and 420 for nonveg serves two.

Sweet Corn Soup

Starting of with my main course corn soup,  nalli nihari, kholapuri chicken masala, rogan gosht, chicken tikka, paneer biryani and raita all the recipes were prepared with less or perfect amount of oil its not greasy very healthy tiffin box they prepare all the recipes with less oil butter ghee and cream.

I can most definitely say it was the best nalli nihari i ever tasted in Bangalore so far...its a knock out...

 with no more space in our tummy we were also served butter scotch ice cream...

My meal was complete with a wonderful caramel custard and blue berry cheese cake overall experience was awesome...

Its okay to forget your dabba once in a while just head to tiffin box the buffets are super really affordable very fresh ingredients used...from Birmingham to kolkata  every dabba has its own history and authentic taste picky eaters like me have a wide range to choose from let it be veg or nonveg they do not serve alcohol just choose lassi or smoothie its good for heart every tiffin box is filled with soul food make your day special opening a tiffin box filled with surprises...

Chakum Chukum best rolls in Bangalore

Dad and I were driving all day we had to cover some important errands this made us totally hungry and it was lunch break so i suggested dad why don't we step in for some whole some meal at chakum chukum they prepare best roti rolls on the go many friends and family have recommended this place before we finally made it...

Once we found the place it was totally packed there was hardly place to stand or sit its a take away joint...I saw people very fondly ordering for chicken and mutton rolls they throng through out the day Chakum Chukum is open from 11am till 11pm some times the rush is so much they are forced to open till 12 pm..

Once i placed my order  I got to meet Mrs.Arpita the flag bearer of Chakum Chukum it all started in 2009 arpita's hubby was working here in bangalore she was so fond of roti rolls every now and then the couple were in search of best roti rolls in town her search was a fail until she finally decided to take things into her own hands and start a small roti roll joint she did not expect any huge returns from it all she wanted to do was serve up authentic calcutta style roti rolls it was a hobby which turned to her full time profession...

like all other women arpita also faced the storm she had to juggle with business, kid, home affairs, few taunting customers etc but her determination never failed like they say "when the going gets tough, the tough gets going"...all of us have to start some where to reach our goals in life. when i started my blog mom was my inspiration after seeing arpita I'm totally inspired with her great attitude towards life take what ever life throws at you and make the best of it...this is my message to all women out there learn your life lessons and start sketching out your dreams and put it to action...

Arpita's kitchen is tiny with 2 tables and few stoves there is hardly any space to stand way back when she started in 2009 she used to cook from scratch as her business grew she had to appoint people.  5 to 6 people work there Chef Khan handles everything with ease Khan and his assistants roll rotis in no time tawa fry it with egg meat or veg toppings followed with chutney and condiments rolled into delicious bundles of joy and serve it pipping hot...

Mutton and Chicken Roll

We ordered for chicken roll = 80 rs double chicken egg roll=100 rs mutton roll= 130 rs and veg paneer roll=80 rs prices are quite reasonable for a wholesome meal you have options to choose depends how spicy rolls you prefer what chutney would you like etc... they also have options on rotis and filling whether you prefer double roti, eggs and chicken...

My order for double chicken egg roll with extra mustard and chutney tasted out of this world absolutely yummy fluffy roti topped with egg and filled with  tender grilled chicken tikka which is barbecued shredded and filled in the center with onion it was truly amazing and tasty if you like spicy stuff like me make sure to ask for mustard sauce in your roll its yum...

Mutton is similarly cooked as chicken its grilled and shredded every bite was spicy n juicy yumminess...i was totally tempted to order some coke had to restrain my self dieting a bit on sugary ever they also serve sweet lime soda and classic lassi...

People have traveled long and far to taste these fantabulous rolls many awards news mentions and scribbled messages from most visited customers  showcases her doorway and wall space. where is Chakum Chukum Located?

We have been dining at Richie Rahhams for almost 10 years now its one of those restaurants where we go as a family to relax and enjoy food i would give you a honest suggestion to visit richies during afternoons by 1 pm after 2 the biryani's are sold out  night out at richies serves some scrumptious chicken shawarma and  sheek kebabs.

The Interiors and seating is very retro comfortable cushioned chairs white crockery and roses welcome you the moment you enter aromatic spices from the out door kitchen will surely make you extra hungry by 1 pm 2 levels @ richies is packed with crowd.

As soon as we entered we were made to seat at a comfy corner and were handed menu cards the price range is reasonable they serve mixture of chinese, maharastrain, kashmiri, sufi, greek and punjabi specials it can get bit confusing while ordering your best meal...follow me and see what we ordered....

Soup was quite tasty pieces of shredded chicken is reduced in chicken stock seasoned perfectly with soya sauce chilly sauce and pepper thickened with corn starch and garnished with vinegar and coriander was yum.

Pieces of tender boneless chicken marinated with yogurt and spices pan fried with chillies and curry leaves was crunchy char bits of chicken was super how ever i would suggest to order chicken kababs instead this recipe sadly was tad bit greasy for my palette.

Pieces of marinated chicken fried in ghee then simmered in a spicy sauce tasted absolutely yum with Biryani.

Marinated Gosht cooked to perfection with spices and jeera rice tasted out of this world absolutely yummy biryani devoured in minutes...we also ordered pepsi...

Rice simmered in milk, khoya,saffron and sugar reduced to pudding consistency what a wonderful way to complete a meal

The take away counter is always buzzing with people... Packets of biryani getting sold in no time do visit richies and experience the vibe...

HajiAli Taste of Mumbai @Bangalore

Ending a clam and relaxed Sunday on a sweet note me raksha, vamshi and jeet my #blog world friends were out for a mothers day event and we badly wanted a break from norm so we sat in vamshi's car and headed to our unknown destination at first we wanted to settle in for coffee then we argued about it and drove and drove finally ended up at HajiAli food shrine @ MM Road...

We picked the right choice and coming to a place where we could attain peace over a few gulps of sweet faloodas...we needed me time pointless conversations jokes planning on future... which is not going to happen soon and loads of laughter made our day special for once we forgot about all the burdens of life and returned to childhood days...

HajiAli is popular among college kids in Mumbai they are know for best grilled sandwiches pastas smoothies faloodas and fruit juices on a budget when i used to stay at mumbai for work HajiAli was always on my mind for snacking i used to see both young and old visit them in large numbers... 

I was surprised to see HajiAli at our own city was quite exciting to revisit and recuperate old memories the place is well lite quite centralized to colleges schools and offices in and around neatly maintained parking is available right outside and importantly staff is friendly...

We sat down and relaxed a bit as they handed the menu cards  i was quite surprised to see few new dished added to their extensive menu...i had no space in my tummy for all of that neither were my friends so we settled down for faloodas...

 We ordered Mango, Butterscotch, Kesar and Dry Fruit Faloodas... ranging between 130 to 160 Rupees..

The creamy and wonderful faloodas were yummy a bit to sweet for my pallet but we enjoyed every bit..totally worth it they are opened 11am till 11pm

and in no time its all gone...

HajiAli is a place to enjoy with family and friends there is a private seating area if you want to organize a birthday party or anniversary the right place to be in with loved ones i will totally recommend this place for your next event and i will be visiting HajiAli for sure...

3 Ferrero Rochers 
2 Tbsp Coco Powder
1/2 Tsp Instant Coffee Powder
2 Scoops of Ice cream + for garnish
1 Tbsp Sugar
3 Cups Milk

Prep Up:
Place the milk in a bowl and freeze until it forms crystals.

  • In a juicer mixer jar add the ferrero rocher coco powder sugar coffer powder and grind until powder format.
  • Add milk and ice cream whip until all ingredients are well combined pour into tall tumblers garnish with scoops of ice cream and ferrero rocher serve right away....Enjoy...:)

Apple Mojito Recipe

I  was totally motivated to recreate a old recipe after watching Chef Vikas Khanna's Twist of Taste my original recipe was Apple Juice My Way.

2 Cups Apple Juice (I used Tropicana)
1 Tbsp Ginger Juice
1/2 Tsp Lime Juice
1/4 Tsp Cumin or Chat masala powder
Few Mint leaves
Maraschino Cheery for garnish
Sprite or 7up soda
Ice cubes as required 

Mixing Up:
  • In a serving glass or jug combine apple juice, lime juice, ginger juice, ice cubes and mint stir well.
  • Make sure all your ingredients in the glass is half way filled.
  • Pour in the lime soda garnish with cherries, mint leaves and apple slices serve right away...Enjoy...:)
