Orange Lassi Recipe

Orange Lassi Ingredients:
2 Oranges 
1 Cup Yogurt
1/2 Cup Milk
3 to 4 Tbsp Sugar
Prep:
Peel the oranges and remove the membrane or the transparent skin on the orange segments, remove the seeds and reserve in a bowl.

Use chilled milk and yogurt for this recipe.
Method:
Reserve some orange segments for garnish, add the rest to a mixerjar along with sugar and grind to form a smooth paste.

Next add yogurt and milk grind until smooth lassi is formed. Pour the lassi in a tall serving tumbler, top with orange segments, garnish with cherries and serve chilled...Enjoy!

Rose Lassi Recipe

Rose lassi is a soothing and filling drink for this hot summer.

Rose Lassi Ingredients:
1/4 Cup Rose Syrup 
1 Cup Yogurt
5 Almonds
5 Cashews
5 Pistachios 

Prep:
Place yogurt in the fridge till chilled.


Method:
In a mixerjar add rose syrup, yogurt, 3 almonds, 3 cashews, yogurt and grind till a smooth lassi is formed, pour the lassi in a tall tumbler, grate the almonds, pistachios, cashews garnish the lassi and serve ...Enjoy!

Amla Lassi / Nellikkai Moru / Gooseberry Smoothie

Lassi is considered a probiotic-rich drink because it is made from yogurt, which contains beneficial bacteria that promote gut health. These bacteria, known as probiotics, help maintain a healthy balance of gut flora, aiding digestion and boosting overall well-being. Incroporating amla, in lassi, offers a wide range of health benefits, including boosting immunity, supporting heart health, improving digestion, and promoting skin and hair health. It's a rich source of vitamin C and antioxidants, making it a valuable addition to a healthy diet. Intake of 1 or 2 large amla everyday is a must. If you find amla bitter or sour then try this way a lassi format.

Ingredients:
2 Large Amlas Grated
1/2 Inch Ginger Grated
3 Sprigs Coriander Leaves
2 Sprigs Curry Leaves
1 Green Chilly
1 Cup Yogurt
1/4 Tsp Asafetida
1/2 Tsp Cumin Seeds
1 Tsp Salt
Prep:
Wash and grate the amla.
Peel, wash and grate the ginger.
Remove the stem from green chilly rinse in water slit and reserve.
Remove the roots and hard stems from coriander leaves. Rinse twice or thrice and reserve.
Separate the curry leaves from the stems, rinse well and reserve.
Method:
In a mixerjar add the grated amla, grated ginger, chilly, curry leaves, coriander leaves, cumin seeds, asafetida and salt, cover and grind to form a smooth masala.

Add yogurt and grind till smooth.

In a tall tumbler add half the amount of the ground yogurt amla mixture, next dilute with cold water and serve...Enjoy!

Amla Lassi Ingredients:
2 Grated Amla
8 Tbsp Sugar
1 1/2 Cups Fresh Yogurt

Method:
Wash the amlas then using a cheese grater grate it and add it to a mixer jar, along with sugar. 

Grind the amla and sugar first. Next add the yogurt and grind to form a smooth puree.

Refrigerate the lassi till it is chilled and serve in a serving glass...Enjoy!

Kukumapoo Vazhaipazham Lassi / Kesar Badam Banana Lassi / Saffron, Almond and Banana Smoothie Recipe

Saffron, almond and banana lassi is a soothing and filling drink for this hot summer.

Ingredients:
1 Over Ripe Banana
2 Tbsp Sugar
1 Cup Chilled Yogurt
1/2 Cup Chilled Milk

Prep:
Boil the milk, bring it to room temperature then place it in the fridge till it is chilled
Place yogurt in the fridge till chilled.

Tip:
For creamy taste and texture boil the milk and reduce it a bit. Boiled milk also enhances the flavor and taste of any milkshake and lassi recipes.
Method:
In a mixerjar, peel, chop and add the banana followed by the sugar and badam milk powder grind to form a smooth puree.

Next add milk and yogurt and grind till a smooth lassi is formed and serve chilled in a tall tumbler...Enjoy!

Grapes Lassi Recipe

When grapes are in season prepare this delightful lassi.  I loved the paneer / rose flavor grapes in this recipe.

Ingredients:
1/2 Cup Grapes (Seedless / Paneer / Rose Flavor Grapes)
We can use any seedless grapes but the paneer / rose flavor grapes is so good.
1/2 Cup Fresh Chilled Yogurt
3 Tbsp Sugar
1/4 Cup Chilled Water
Method:
Separate the grapes from stem and rinse in water thrice.
Add the grapes and sugar to a mixer jar and grind to form a smooth puree.
Add yogurt and grind to form a smooth lassi.
We can dilute with water and grind if the lassi is to thick.
Transfer the lassi to a serving glass and serve...Enjoy!

Avocado Spicy Lassi Recipe

This avocado lassi is a must try recipe. Thick and very filling lassi can be served as a drink with parathas, biryani and sandwiches.

Ingredients:
1/2 Cup Avocado
1 Cup Chilled Fresh Yogurt
1/4 Tsp Cumin Powder
1/2 Tsp Pepper Powder
1/2 Tsp Salt
5 Sprigs Mint Leaves
5 Sprigs Coriander Leaves
2 Sprigs Curry Leaves
1/4 Tsp Grated Ginger
1 Green Chilly
1/2 Cup Water

This recipe serves 2. If the yogurt is sour we can add milk.

Prep:
Separate mint, coriander and curry leaves from stem.
Rinse the leaves thrice. Drain the leaves and leave it in a colander
Peel and wash the ginger.
Remove the stem from chilly, rinse well and reserve.
Wash the avocado and chop the fruit in half. Using a spoon scoop the avocado and reserve.

Method:
In a mixerjar add the ginger, mint, coriander, curry leaves, chilly, pepper powder, cumin powder, salt cover the lid and grind to form a coarse paste.
Next add the avocado and grind till the masala has blended well with the fruit.
Add yogurt and splash of water and grind. Taste test and add salt if needed. Grind to form a smooth lassi.
If needed add extra yogurt and water to dilute and grind till well combined.
Pour the lassi in a tall tumbler and garnish with a sprig of mint...Serve...Enjoy!

1 Over Ripe Banana
1 Cup Fresh Yogurt Chilled
1/4 Cup Chilled Milk
3 Tsp Sugar
2 Cardamoms
Method:
In a mixerjar peel, chop and add the banana.
Add sugar and cardamom, place the lid and grind the banana till smooth paste.
Add yogurt and milk cover the lid and grind to form a smooth lassi.

Avocado Sweet Lassi Recipe

This avocado sweet lassi is perfect welcome drink , or can be served for barbeques and parathas.

Avocado Sweet Lassi Recipe Ingredients:
1 Avocado
1 Tbsp Chopped Nuts Almonds, Walnuts or Cashews
1 Tbsp Raisins 
1 Cup Yogurt
3 Tbsp Sugar
Garnish: 2 Tbsp Chopped Almonds, Walnuts, Cashews and Raisins
Prep:
Place the yogurt in the fridge and use only chilled yogurt for this recipe.

Chop all the nuts almonds, cashews and walnuts into tiny pieces for garnish and blending.

Wash and chop the avocado in half, remove the seed and scoop the avocado into a plate, chop into cubes for easy grinding.
Method:
Add the chopped avocado to a mixer jar along with 1 tbsp chopped nuts and raisins.

Add sugar and grind to form a smooth puree.

Next add yogurt and grind to form a smooth lassi.

Add water and blend once more.

In a tall tumbler pour the lassi and garnish with raisins, chopped walnuts and almonds. Serve right away...Enjoy!

Mango and Banana Lassi Recipe

Mango and banana lassi is a meal on its own. We have to prepare and consume this lassi right away, it cannot be stored as the banana will oxidize in few seconds and the lassi will not look appealing. I've used papilon yellow food color and mango flavor in this lassi and it can be stored for a short period of time. We can serve this lassi chilled or in room temperature.

Mango and Banana Lassi Ingredients:
1 Cup Ripe Mango Cubed
1 Cup Banana Cut into Coins
1 Pinch Pepper
1 Pinch Salt
3 Drops Papilon Mango Flavor
3 Drops Papilon Yellow Color
250 ML Yogurt
2 Tbsp Chopped Nuts (Almonds, Pistachios, Cashews, Walnuts)
Cherries for decoration
Ice cubes optional...

Method:

In a mixerjar add the chopped mango, banana, sugar, salt and pepper grind to form a smooth puree.

Add yogurt, 3 drops mango flavor and 3 drops yellow food color blend well and serve the lassi in a tall tumbler.

Garnish with chopped mango, dry fruits and cherry...Enjoy!

Dry Fruit Lassi and Mango Lassi in Association with Papilon

Lassi is a popular drink here in Bangalore one can find at least 2 to 3  lassi shops in one area.  How I got to know the count of lassi shops? I was with a client for his project on Indian food and we can across so many lassi shops I never really paid attention to all the time. During this food project I got to know bengalureans actually enjoy more lassi than any other drink.



Papilon Lassi flavor enhances the flavor in the lassi. Creamy lassi prepared with dry fruits and mango is truly a rich meal on its own.

Ingredients: 
Mango Lassi:
1 1/2 Cups Chopped Ripe Mango
1 Cup Yogurt
2 Tbsp Sugar
1 Pinch Salt
1 Pinch Pepper Powder
1 Drop Papilon Mango Food Flavor 
1 Drop Papilon  Lassi Flavor
Finely Chopped Dry fruits for garnish...

Dry Fruits Lassi:
1 Whole Walnut
5 Almonds
5 Pistachios
1 Date
1 Cup Yogurt
2 Tbsp Sugar
1 Pinch Salt
1 Pinch Pepper Powder
1 Drop Papilon Lassi Flavor

Hung Yogurts Topping:
1 Cup Hung Yogurt
1 Drop Khus Paplion Flavor
1 Drop Mango Flavor
4 Tbsp Sugar
1 Pinch Salt
1 Pinch Pepper Powder

Prep:
To a cheese cloth add 1 cup of thick yogurt, gather the cheese cloth and hang the yogurt in a semi lit area, place a bowl under the yogurt to collect all the moisture. If your using a tea strainer add the yogurt to the strainer and place it in a bowl allow the excess moisture to drain and reserve the hung yogurt in a bowl.

We need to prepare the hung yogurt ahead of time. To garnish the lassi finely chop or roughly crush almonds, pistachios, cashews and dried dates and reserve.

Wash, Peel and Chop Ripe Mango into large chunks and reserve.

Method Dry Fruit Lassi:
Add 2 Tbsp hung yogurt to a mixing bowl. Mix the hung yogurt till fluffy. Add 3 tbsp sugar, 2 to 3 drop khus flavor, pinch of salt and pepper powder mix well and allow the mixture to rest on counter top for 5 minutes.

In a mixerjar add dry fruits (dried date, walnut, almonds, pistachios, cashews) and sugar pulse twice and grind to form a coarse powder. Add few drops of lassi flavor and yogurt, pulse twice and grind to form a smooth puree.

Dilute with milk and water and pulse twice. Add icecubes to a tall tumbler and pour the lassi. Top the lassi with khus yogurt and garnish with chopped dried fruits...Serve and Enjoy!

We can serve lassi chilled or in room temperature...

Method Mango Lassi:
Add 2 Tbsp hung yogurt to a mixing bowl. Mix the hung yogurt till fluffly. Add 3 tbsp sugar, 2 to 3 drop mango flavor, pinch of salt and pepper powder mix well and allow the mixture to rest on counter top for 5 minutes.

In a mixerjar add mango and sugar pulse twice and grind to form smooth puree. Add few drops of lassi flavor and yogurt, pulse twice.

Dilute with milk and water and pulse twice. Add icecubes to a tall tumbler and pour the lassi. Top the lassi with mango hung yogurt and garnish with chopped dried fruits...Serve and Enjoy!

We can serve lassi chilled or in room temperature
