Breakfast Series: Curried Macaroni Recipe


In southindia by default many of our breakfast dishes are vegan and dairy free, mostly rice based dishes. I wanted to create something different which was dairy free and vegan for this breakfast series and one thing I noticed while coming up with this recipe was, spicy curries we southindians enjoy to the core from breakfast to dinner. Curry is always served with fluffy puris, set dosas and even bread toast. I tried to incorporate the curry flavor and taste in this dish, which turned out excellent.

Ingredients:
250 Grams Macaroni 
1/2 Cup Capsicum
1/4 Cup Peas
1/4 Cup Sweet Corn
1 Cup Onion
1 Cup Tomato
6 Green Chilies
3 Tbsp Coriander and Mint
1 1/2 Tbsp Curry Powder
1/2 Tsp Red Chilly Powder
1/4 Tsp Turmeric Powder
1/2 Tbsp Coriander Powder 
1/4 Tsp Mustard Seeds 
1/4 Tsp Cumin Seeds 
2 Dry Red Chilies 
1 Tbsp Ginger and Garlic Paste
3 Tbsp Oil
Salt as per taste...

Method:
Cook the macaroni as per package directions. Make sure to rinse the macaroni in cold water, drain and reserve.

Finely chop all the veggies (capsicum, onion, tomato, mint and coriander).

Heat a heavy bottom pot or use a pressure cooker with 3 tbsp oil.
Once the oil smokes add mustard seeds and cumin seeds allow to sputter and stop sputtering.

Add dried red chilies and fry for few seconds.

Add onion, tomato and chilies fry till the onion turns transparent and tomato has soften a bit.
Add ginger and garlic paste to the onion masala and fry till raw flavor reduces.

Add the veggies capsicum, peas and corn and fry all the veggies for few seconds.

Add chilly powder, coriander powder, turmeric powder and fry for few more seconds or until the raw flavor reduces.

Add 1/4 cup water to the veggies stir and add salt as per taste...stir well, cover and cook until all veggies are cook and moisture has reduced.

Once the veggies have cooked add curry powder and fry for few minutes until the veggies absorb the flavor from curry powder.
Add the cooked macaroni and mix well until the masala is well incorporated in the macaroni.

Allow the macaroni to heat all the way and serve hot...We can serve the macaroni as it is or with fried eggs...Enjoy 😊

Colourful Vegetable Masala Macaroni Recipe


Masala Macaroni has been a favorite dish at my house for ages. We normally prepare such recipes to clear out excess veggies from the fridge and also help us organize produce for upcoming weeks. 

This dish pairs well with crunchy fried chicken, french fries or potato cheese balls. Perfect dish to prepare and take at potlucks, picnic or pack for school or office lunch box.

We can prepare the vegetable masala and macaroni separately and store it in a sir tight container refrigerated until use. Just before packing the lunch box or before serving we can reheat the veggies and mix the macaroni heat it and serve.

Ingredients:
450 Grams Macaroni 
1/4 Cup Each Mixed Vegetables (Spinach, Cauliflower, Capsicum, Carrots, Peas, French Beans, Corn)
1/4 Cup Ketchup
5 Tbsp Chilly Sauce
1 Tbsp Garam Masala
1 Tbsp Chilly Powder
1 Tsp Turmeric Powder
1 1/2 Tbsp Ginger and Garlic Paste
1 Large Onion
1 Large Tomato
1 Cup Tomato Puree
3 Green Chilies
3 Dried Red Chilies 
3 Sprigs Curry Leaves 
1 Tsp Chilly Flakes 
1 Tsp Mixed Italian Herbs
200 Grams Mixed Cheese ( Cheddar and Mozzarella )
3 Tbsp Ghee
2 Tbsp Oil 
Salt as per Taste
Lime Juice. Coriander leaves for garnish...


Method:
For this recipe make sure to clean all the veggies and finely chop.

Pre cook the macaroni as per package directions, drain and reserve. Do not add oil while cooking macaroni as it will not absorb masala.

Heat a heavy bottom pressure cooker or wok on medium flame with ghee and oil. 

Add the finely chopped onions, curry leaves, green chilies, ginger and garlic paste to the oil and fry till onion is transparent.

Break the dry red chilies into half and add to the onion fry for few minutes this enhances the flavor and taste.

Add the dried masala powders, tomato and tomato puree and fry until the tomato has softened.

Add ketchup and chili sauce and cook for few more minutes. Add all the prepped veggies and fry for a minute. I have reserved half the amount of capsicum and sweet corn to add later for added crunch.

Add 1 cup water and salt as per taste to the veggies stir well, cover and cook until the veggies are tender.

Once the veggies have cooked place on high flame to reduce the moisture a bit, the oil will surface on the sides, add the cooked macaroni toss well to coat. Add lime juice and mix well.

Just before serving garnish with easy melting cheese, coriander, italian seasoning and finely chopped coriander...Serve hot with fried chicken...Enjoy 😊

Spaghetti Arrabiata @Howard Johnson, Hebbal-Bengaluru

I'm always in search of live pasta counters at buffets. The pasta that I truly enjoyed was at Howard Johnson, located at Hebbal. Chef Vikas Chandra prepared a spaghetti with simple set of ingredients which was so tasty and packed with flavors, I happen to record a video while he prepared my order.

Spaghetti for 2 servings:
Spaghetti 1 packet follow the package directions and cook and reserve.
1 Cup Veggies of choice: Broccoli, Carrots, Baby Corn, Mushrooms, Zucchini and Bell pepper chopped into cubes blanched and reserved we can also steam cook the veggies and reserve.
1 1/2 Cup Pasta sauce or Arrabiata Sauce.
1 Tbsp Finely Chopped Garlic
1 Tbsp Chilly Flakes
1 Tbsp Mixed Italian Herbs: Oregano, Thyme, Basil 
1 Tbsp Olive Oil
Salt and Pepper as per taste

Method:
Heat a pan on medium flame add olive oil and the garlic fry till raw flavor from garlic has reduced. Add chilly flakes and fry. Add pasta sauce and veggies fry for a minute. Add the pasta and herbs toss to coat and serve sprinkle grated cheese if needed Enjoy...:)

Sambar Pasta

This recipe was purely my experiment turned out in flying colors everyone at home enjoyed my concoction by the end of the day it was my comfort food  enjoyed...:)

Ingredients:
500 Grams Pasta of your choice I've used delmonte Spirali Pasta
100 Grams Fresh Green Beans (Chopped into 1 inch pieces)
2 Carrots (Peeled and chopped into 1 inch sticks)
1 Large Capsicum(deseeded and chopped in 1 inch Sticks)
1/2 Cup Frozen Peas
1 Large Onion (Roughly chopped)
5 Green Chillies Slit
2 Sprigs Curry Leaves
Fist Full Coriander (Chopped)
Grated Cheese
2 to 3 Tbsp Sambar Powder
2 Tbsp Oil
2 Tbsp Ghee
Salt as per taste
Lime juice for garnish

First Step Cooking Pasta:
  • In a large heavy bottom pot fill up water 1/2 way thru
  • Add a tsp of salt and oil to the water bring to a rapid boil.
  • Add the pasta and cook till aldente which means the pasta has not cooked completely or its not well done it still has a bit to it.
  • Using a colander drain the pasta.
Second Step Spicing up those veggies:
  • Heat a heavy bottom pot on medium flame add oil and ghee.
  • Add onion chillies and curry leaves to the oil and fry till transparent.
  • Add all the veggies and and salt fry a bit add water cover and cook the veggies till done.
  • Add Sambar powder to the veggies and stir well allow the moisture to evaporate a bit.
Third Step Combing:
  • Add the pasta to the veggies and toss till well combined check for seasoning add salt if needed.
  • Add chopped coriander and lime juice mix well.
  • In a baking dish add the pasta and top with cheese place it in microwave for 4 to 5 minutes till cheese melts serve it hot...enjoy...:)

Pizza/Pasta Sauce Recipe


This Pizza/Pasta Sauce is very easy to prepare recipe it can also be served as a condiment for crusty bread or salt biscuit. Since I've not added any preservatives, I tend to prepare this sauce just day before we prepare any pasta or pizza can be stored in the fridge for a week. 

Ingredients:
1 Red Bell Pepper/Capsicum 
4 Ripe Tomato
10 Cloves Garlic
2-3 Green Chillies
1/4 Tsp Dried Basil
1/2 Tsp Oregano
1/2 Tsp Chilly Powder
1/2 Tsp Garam Masala
Salt to taste.

Lets Prepare:
  • In a mixer jar add tomatoes, capsicum, chillies, garlic and salt add very little water and grind to a smooth puree.
  • Heat a heavy bottom pan add the puree bring to boil put it on low flame and allow the sauce to reduce a bit add the chilly powder and garam masala stir allow to reduce.
  • Keep stirring the sauce for 10 mins.
  • Add the basil and oregano stir bring to a boil and remove from flame.
  • Allow to cool add the sauce to a jar cover and refrigerate till use.

Macaroni Kichadi Recipe

I totally came up with this recipe one day we had lot of boiled veggies and cooked leftover dhal combined all the ingredients to create a yummy macaroni kichadi. Out come was superb everyone enjoyed and appriciated my efforts.
Ingredients:
1 1/2 Cups Elbow Macaroni
1/2 Cup Pigeon Peas / Toovar Dal
1 Medium Onion (finely chopped)
1 Large Tomato (finely chopped)
2 Cups Mixed Vegetables (Cauliflower, Green peas, Green Beans, Carrots)
1 Tbsp Ginger & Garlic paste
3 Green Chillies
2 Sprig Curry leafs
Fist Full Coriander leafs
1 Tsp Chilly Powder
1 Tsp Coriander Powder
1/2 Tsp Turmeric Powder
1 Tsp Cumin Seeds
3 Pods Cardamom
4 Cloves
1 Inch Cinnamon
1 Cup Shredded Cheddar Cheese (Shredded)
Asafoetida a pinch
3 Tsp Clarified Butter
Few Drops Lime Juice
1 Tbsp Oil
Salt to taste.
Lets Prepare:
  1. Cook the macaroni al-dente drain and reserve in a bowl.
  2. Steam or boil the mixed vegetables and reserve in a bowl.
  3. Wash the dal add 1 1/2 cups of water and cook the dal in a pressure cooker till well done.
  4. Heat a heavy bottom Wok or a Pan use nonstick if possible add oil and clarified butter add the cumin and spices  allow to splutter a bit  add the ginger garlic paste along with the curry leafs stir and fry a bit add the onion, tomato and chillies  add a pinch of asafoetida stir and fry till the onion and tomato sofens a bit add the chilly powder, coriander powder and the turmeric powder to the tomato stir and fry a bit add the dal stir well add the vegetables and salt stir well check and if needed add 1 cup water cover allow to boil.
  5. Add the coriander to the boiling veges stir add the cooked macaroni stir check for salt add if needed sprinkle the shredded cheese on top cover for few minutes serve hot once the cheese melts....serve hot with raita...Enjoy...:)

Macaroni My Style


Ingredients:
  • 1 1/2 Cups Macaroni (Elbow pasta)
  • 1/2 Cup Carrots
  • 1/2 Cup Spring beans
  • 1 Large Onion (Cubed)
  • 1/2 Cup Sweet corn
  • 1/2 Cup Mushroom
  • 1/2 Cup Cauliflower
  • 1 Large Capsicum
  • 1/2 Tsp of Ginger & Garlic (Finely Chopped)
  • 2 Green Chills
  • Coriander leaf (Finely chopped)
  • 1 Inch Piece Cinnamon 
  • 2 Cardamom pods 
  • 2 Cloves
  • 1 Bay leaf
  • 1 Tsp Ajinomoto Salt (Chinese Salt)
  • 1 Tbsp Soy sauce 
  • 1 Tbsp Chilly sauce
  • 1 Tbsp Tomato Ketchup
  • 1 Tbsp Fresh Cream
  • 1 Tbsp Vinegar
  • 1 Tbsp Butter
  • 2 - 3 Tbsp Oil
  • Salt to taste

Lets Prepare:
  • Heat  a pot of water to boil the pasta to the water add vinegar, 1/2 tsp salt and oil and bring to a boil then add the pasta and cook as per packet instructions drain and reserve.
  • Heat a wok add butter and oil fry in the finely chopped ginger and garlic tip in the onion fry add the bay leaf, cloves, cinnamon, cardamom fry till the onion turns pink in color add the beans and carrots and add 2 Tbsp water and cover for 2 to 3 mins on medium flame tip in the corn fry for another 2 mins add the cauliflower and capsicum fry everything add the chilly sauce and ketchup and add bit more water cover and allow every thing to cook for another 3 mins add the mushroom and cover for 1 more min add the cream and soy sauce and fry well add the ajinomoto and salt and fry well.
  • After the masala has cooked well add the cooked pasta mix well add coriander and serve hot...Enjoy...:)
