Bhindi Stir Fry Recipe / Vendakkai Poriyal Recipe

Vendakkai, okra, ladies finger or bhindi is a very popular and staple vegetable consumed across India. There are many versions of this okra stir fry but, this one is my go to recipe, it's very simple and easy to prepare and packed with flavors.

Vendakkai Poriyal Recipe Ingredients:
1/4 Cup Chopped  Bhindi/ Okra / Vendakkai/ Ladies Finger
1/4 Cup Finely Chopped Onion
1 Slit Green Chili
1/4 Tsp Mustard Seeds
1/4 Tsp Split Black Gram Dal
1/4 Tsp Split Chickpeas
1 Dried Red Chilli
2 Tbsp Grated Coconut
5 Sprigs Finely Chopped Coriander
2 Sprigs Curry leaves
2 Tsp Oil
1/4 Tsp Asafoetida
Salt as per taste 

Prep:
Wash the okra well, spread it on a towel allow to air dry, once the moisture has dried, pat dry once more. Start to chop the okra into half inch pieces and reserve.
Peel and wash the onion. finely chop and reserve.
Remove the stem from the green chilly rinse well, slit and reserve.
Rinse the coriander and curry leaves finely chop and reserve.
Rinse 2 sprigs of curry leaves and reserve.
Grate 2 tbsp of coconut and reserve.

Method:
Heat a wok on medium flame. Add 2 tbsp of oil.

Once the oil is hot first add split chickpeas and fry it for few seconds, next add split blackgram dal and fry it for few seconds.

Next add mustard and cumin allow it to splutter. Break the dried chilly in half and add it to the oil fry it for few seconds.

Add finely chopped onion, curry leaves, bhindi/ okra, slit green chilly and asafetida fry all the ingredients for few minutes.

Add coarse salt and stir well. Once the slime has reduced, add 1/2 cup of water cover and place on low flame.

Once the veggies have cooked place on medium flame, add grated coconut and stir well.
Allow excess moisture to evaporate and stir fry for few minutes.

Garnish with finely chopped coriander and curryleaves and serve hot with chapathi or southindian meals and enjoy!

Peppery Bhindi / Vendakkai / Okra Roast


Vendakkai roast is one our go to easy to prepare side dish on weekdays. We normally serve this side dish with pulka or steam cooked rice and rasam.

Prep:
Wash the okra twice and allow excess moisture to drain using a colander.

Spread the washed okra on a cotton towel and pat dry.

If the okra has fuzz wipe using same towel.


Remove the stem and tail from the okra.

Bunch four or five okra start to thinly slice and reserve.


Ingredients:
1 Kilo Bhindi/Vendakkai/Okra
1 Tbsp Black Pepper Powder
1 Tbsp Red Chilli Powder
1/4 Tsp Asafoetida
4 1/2 Tbsp Oil
Salt to taste.


Method:
Heat a nonstick pan or wok,  add 2  tbsp oil allow to reach temperature.

Add  asafoetida allow to splutter. Add the sliced okra stir occasionally on a medium flame, we can place the cover but must stir every 3 minutes once.

Cook the okra for 10 minutes. Excess gel format from the okra must evaporate.


Once the okra is half way done add salt chilli powder and stir well and fry.

Add pepper powder in 5 minutes after the raw flavor from chilly powder has reduced and fry for 2 minutes.

Once you see little bit oil to the sides remove from flame serve hot...Enjoy...😊

Okra/Vendakkai Sambar

Many people hate preparing this vegetable because its slimy...In south we consume this vegetable in kilos in a week atleast 2 days we prepare okra This vegetable is good for memory and always recommended for growing kids.

Ingredients:
1/2 Cup Cooked Pigeon Peas
250 Grams Okra
1 Large Onion(roughly chopped)
1 Tomato (cooked along with dhal)
2 Tsp Tamarind pulp
2 Sprigs Curry leaves

1 1/2 Tbsp Chilly Powder
1 Tbsp Coriander Powder
1/2 Tsp Turmeric Powder
2 Tbsp Sambar Powder
1/4 Tsp Hing/Asafoetida

1/2 Tsp Mustard Seeds
1 Tsp Jeera/Cumin
1/2 Tsp Split Black Gram Dal

4 Tbsp Oil
Salt as per taste
Coriander for garnish

Method:
  1. Wash the okra using a colander drain the excess water. place it on a kitchen towel pat dry.
  2. Chop the okra into 1 inch pieces please check it there is any bugs inside use a dry chopping board and knife.
  3. Heat oil in a heavy bottom pot or handi place it on medium flame temper oil with mustard seeds cumin and black gram once mustard splutters add asafoetida curry leaves and onion till onion turns transparent.
  4. Add  salt chilly powder turmeric powder and coriander powder fry till raw flavor has gone add okra and fry do not add water make sure the okra is fried throughly its should be half cooked and slimy texture should have reduced then add smashed tomato and water cover and bring to a boil.
  5. Once the okra has cooked add cooked dhal and boil.
  6. Add add tamarind and sambar powder stir well bring to a rapid boil add coriander serve hot...Enjoy...:)

Simple Bhindi/Vendakkai/Okra Fry

Excellent no fuss side dish to serve with roti or rice. We can also prepare rolls or a toast using this okra fry.

Ingredients:
1 Kilo Bhindi/Vendakkai/Okra
1 Tbsp Black Pepper Powder
1 Tbsp Red Chilli Powder
1 Pinch Asafoetida
4 1/2 Tbsp Oil
Salt to taste.

Lets Prepare:
  • Wash the okra pat dry and thinly slice into coins.
  • Add 2 tbsp oil to the sliced okra mix well and allow to rest for 10 minutes.

  • Heat a nonstick pan or wok add 2 /12 tbsp oil add the sliced okra and start fry keep stirring constantly on a medium flame you can place the cover but must stir every 3 minutes once.
  • Once the okra is half way done add salt chilli powder and stir well and fry.

  • Once the okra has turned light brown in color and there is no more gum texture left add pepper powder and fry for 2 minutes.
  • Once you see little bit oil to the sides serve hot...Enjoy...:)

Bhindi Tava Fry(okra recipe)

Ingredients:
500 grams Okra (Ladies finger or Bhindi)
1 Tbsp Dry Mango powder = Amchur
1 Tbsp Garam masala powder
1 Pinch Asafoetida
1/2 Tsp Chat masala
1/2 Tsp Cumin powder
1/2 Tsp Black pepper powder
1/2 Tsp Turmeric powder
1 Tbsp Red Chilly Powder
1 Tbsp Salt
3-4 Tbsp Corn Strach or flour
3 Tbsp oil.

{In the video demo I was unable to show the gravy normally i prepare gravy for bhindi tava fry}
Lets prepare:
  • Wash the okra and chop the head and tail portion slit in the middle  set aside.
  • In a bowl Mix all the dry ingredients chilly powder, turmeric, pepper powder, 1 tsp salt, chat masala, Garam masala, Cumin, asafoetida, Dry mango powder mix everything (Also reserve a pinch of all the masala for the batter)
  • Fill the Masala mix in the slit bhindi and rub the excess masala over the bhindi and marinate for 15 mins
  • In the mixing bowl add corn flour and rest of the dry masala with water and 1 tsp salt and add to the marinated bhindi mix everything.
  • Heat a tava or pan add 2 tbsp oil and toast the bhindi on the tava till the bhindi cooks well and the outer cover goes crisp. serve hot sprinkle a pinch of chat masala and corianderleafs serve with rice and dhal...enjoy...:)
