Breaded Crispy Fried Paneer / Moru Moru Paneer Recipe

Creamy and crunchy, melt in your mouth deep fried breaded paneer is a prefect starter.

Ingredients Moru Moru Paneer
200 Grams Paneer
1 Cup Maida 
1 Tbsp Chillli Powder 
1/2 Tbsp Pepper Powder 
1/2 Tbsp Chillli Flakes 
1/2 Tbsp Salt
1 Cup Panko Breadcrumbs 
1 1/2 Cups Oil For Frying 

Prep:
Chop the paneer into bite size cubes and reserve.

In a mixing bowl combine all purpose flour (maida), chilly powder, pepper powder, chilly flakes, and salt. 

Gradually add water in small batches and stir well to form a smooth batter. The batter should coat your spoon not to thin not to thick.

Cover the batter for 5 minutes. Spread the panko breadcrumbs in a plate or box reserve.

Method:
On medium flame place a heavy bottom wok, add oil for frying. Place the flame on lowest setting, allow the oil to reach smoking point. 

Stir the prepared batter once. Dip the paneer cubes in batter the gently roll in panko shake off excess crumbs and reserve. Prepare a batch of 5 to 6 for frying.


Gently slide the breaded paneer in hot oil allow to fry for few seconds before flipping to otherside.

Flip a fry the paneer on all sides till golden. Using a slotted spoon drain the fried paneer and reserve on a paper napkin to drain out excess oil. 

Plate the fried paneer in a serving platter with ketchup, mayo or pizza sauce...enjoy☺️

Paneer Kola Urndai Recipe Using Philips Air Fryer ( Paneer Kofta )

Paneer Kola urndai recipe. Buttery and creamy paneer kola is a perfect starter and pairs well with ghee rice, veg biryani,  or tomato rice.

Ingredients:
200 Grams Grated Paneer
1/4 Cup Finely Chopped Onion
2 Finely Chopped Green Chilies
2 Sprigs Curry leaves Finely Chopped
1 Fist Full Mint and Coriander Leaves Finely Chopped
1 Tbsp Ginger and Garlic Paste
1/4 Tsp Asafetida
1/4 Tsp Chilli Powder
1/2 Tsp Garam Masala
1/4 Tsp Fennel Seeds
2 Tbsp Roasted Bengal Gram
Salt as per taste
2 Tsp Oil
Method:
1. In a mixer jar add fennel Seeds,  roasted bengal gram and grind to form smooth powder.

2. In a mixing bowl add grated paneer,  finely chopped onion, chillies, mint, coriander,  curry leaves,  asafetida,  chilly powder,  garam masala, and salt knead to form smooth dough.

3. Add the ground gram flour in small batches and knead to form smooth dough.

4. Divide and roll the paneer into equal lime size roundels.

5. Place the paneer roundels in the airfryer basket and place the airfryer basket in the airfryer on 180 degree mark cook for 10 minutes.  Every 5 minutes mark flip the paneer Kola till it turns golden.

6. Remove the paneer kola from the airfryer and serve hot for pulao or ghee rice...enjoy!

Peri Peri Paneer Tikka Recipe Using American Micronic Barbecue Griller

Peri Peri Paneer Tikka
Ingredients:
250 Grams Paneer
100 Grams Capsicum 
1 Large Onion
1 1/2 Tbsp Peri Peri Seasoning 
1/2 Tsp Spicy Chilly Powder
1 Tsp Curry Powder
1/4 Tsp Cumin Powder
2 Tbsp Fresh Cream or Yogurt
Salt as per taste
Butter

Prep:
Chop the paneer into cubes.

Peel and wash onion, chop the conion into large cubes.

Wash and chop the capsicum into half, remove the seeds and chop into cubes.

Method:
In a Mixing bowl combine cubed paneer, capsicum, and onion.

Add all the spice powders... peri peri seasoning, chilly powder, cumin powder, salt and fresh cream.

Combine all the ingredients well and massage it in the paneer and veggies.

Allow it to rest on the kitchen counter for 5 minutes.

Heat the griller on 5 mode for 5 minutes.

Start to skewer the paneer and veggies alternating the paneer followed by the veggies.

Place the skewer on the grill and grill the paneer for 2 minutes on each side for a total of  5 minutes.
Apply butter and grill the paneer on all sides, remove from the grill pan and plate the skewers garnish with grated cheese, serve hot with chilly sauce...Enjoy!

Tawa Paneer Burger Recipe

Creamy soft paneer slightly pan fried spices and stuffed inside this burger was really delicious and packed with flavors. It hardly took me 10 to 15 minutes to prepare this entire dish. This recipe serves 2 to 3 generous portions.

Tawa Paneer Ingredients:
2 Burger Buns
1 Cup Cubed Onion Petals 
1 Cup Cubed Capsicum
1 Cup Cubed Tomato
100 Grams Cubed Paneer
1 Inch Grated Ginger
1 Tsp Kashmiri Chili Powder
1 Tsp Red Chili Powder
1/4 Tsp Cumin Powder
1 Tsp Garam Masala 
1/4 Tsp Turmeric Powder
1 Tsp Chat Masala or Pudina Masala
2 Tbsp Yogurt
1 Tsp Salt
4 Tbsp Oil
Prep:
Peel and wash 1 inch ginger. Grate the ginger and reserve.

Peel and wash 2 medium onions. Cube 1 1/2 the onions. Finely chop the remaining.

Wash and remove the seeds from 1 large capsicum. Chop the capsicum into cubes and reserve 1 cup. Finely chop the remaining.

Wash and chop tomatoes into cubes and finely chop 1/2 tomato and reserve.

Chop the paneer into cubes and reserve.
Method:
Heat a tawa on medium flame with 2 tbsp oil.

Add the grated ginger and fry on low flame for few seconds.

Add the cubed onion, paneer, tomato and capsicum togeather and fry for a minute.

Add 2 tbsp yogurt, Kashmiri chili powder, chilly powder, turmeric powder, cumin powder and garam masala along with salt. Mix and fry all the ingredients for two minutes on medium flame.

Add a tsp chat masala or pudina masala and fry for another minute and remove the paneer from the tawa and reserve on a plate.

Scrape excess masala from the tawa and reserve along with paneer.

Place the tawa back on low flame add a tbsp oil.

Slice the bun in half and place it on the tawa and fry the bun on both sides for a minute and reserve on a plate.

Layer the bun with the paneer masala and top with finely chopped onion, capsicum and tomato, close other half of the bun and serve the tawa paneer burger hot with potato wedges...Enjoy!

Tawa Paneer Tikka Recipe

Recreated my original recipe from 2011 on new years eve it was very nostalgic and heartwarming... I've come a long way creating and sharing the best content for my viewers. My intentions are always to keep people nourished and fulfilled with joy.

Ingredients:
200 Grams Paneer / Cottage Cheese
1 Cup Yogurt
1 Large Green Bell Pepper / Capsicum 
1 Large Ripe Tomato deseeded 
1 Tsp Tandoori Chicken Masala
1/2 Pudina Masala
1/4 Chat Masala
1 Tbsps. Chilly Powder
1/2 Tsp Coriander Powder / Dhaniya
1/4 Tsp Turmeric Powder
1 Tbsps. Ginger & Garlic Paste
Lime juice few drops
A Box of Toothpicks or Fruit Picks
Oil for shallow frying
Salt to taste.
Prep:
Cube the paneer into bite size cubes.

Wash and deseed the capsicums and tomato. Chop into bite size cubes.

Peel and wash, onion and cube into bite size cubes.

Peel and wash equal portions of ginger and garlic and grind to form a smooth paste.
Marination:
In a mixing bowl combine all the spice powders, ginger and garlic paste, yogurt salt and mustard oil mix well.

Add the cubed paneer, onion, capsicum and tomato to the marination.

Mix and coat the marination on the veggies, cover and allow to marinate for 5 to 10 minutes.
Method:
Wash bamboo skewers and start to alternate and skew the veggies and paneer.

Place a tawa on medium flame. Brush the tawa with 2 tbsp ghee.

Gently place the paneer skewers and fry for 2 minutes on each side on low flame. Fry the veggies for 10 minutes and remove from flame.

Repeat and fry more skewers in the same way.

Serve the tawa paneer tikka on a serving plate along with mint chutney and enjoy!

Paneer Matar Malai Recipe

Paneer matar malai is a quick fix curry to serve with chapathis and naans.

Paneer Matar Malai Ingredients:
250 Grams Paneer Cubes
150 Grams Peas Boiled
1-1/2 Large Onion Pureed
1-1/2 Large Tomato Pureed
1 Tbsp Ginger and Garlic Paste
2 Tbsp Butter
1 Tbsp Cumin Seeds
1 Tbsp Coriander Powder
1 Tbsp Chilly Powder
1/2 Tbsp Garam Masala
1/2 Tbsp Tandoori Chicken Masala
1/4 Tsp Turmeric 
1/4 Tsp Asafetida
100 ML Fresh Cream
3 Tbsp Milk Powder or Condensed Milk
2 Tbsp Oil
Salt as per taste
1 Tsp Lime Juice
2 Tbsp Freshly Chopped Mint and Coriander

Prep:
Peel and wash the onion. Roughly chop and add it to a blender and puree the onion. Make sure the onion is pureed smooth and reserve in a bowl.

Wash the tomato, roughly chop and add it to a mixer, puree the tomato and reserve.

Wash and drain the green peas. Add the peas to 3 cups boiling water and cook until tender. Drain and reserve the peas.

Chop the paneer into bite size cubes and reserve.

Clean wash the mint and coriander. Finely Chop and reserve.

Method:
Heat a wok with oil and butter.

Once the oil starts to smoke, add the pureed onion, constantly stir and fry the onion till the oil separates.

Add the spice powders to the fried onion chilly powder, turmeric, coriander, garam masala, and tandoori chicken masala. Fry the masala and with onion for a minute on low flame.

Add the pureed tomato and fry till the oil separates. Add milk powder and stir to combine in the masala.

Add the cooked peas to the masala stir well. Add 1/2 cup water and bring the gravy to a boil.

Once the gravy starts to boil and the oil has separated add the cubed paneer and stir well. 

Cook the paneer in the gravy for 10 to 12 minutes on low flame.

Heat a fry pan with 2 tbsp ghee and oil on low flame. Once the oil starts to smoke add cumin and allow to splutter.

Add the cumin to the gravy along with freshly chopped mint and coriander cover the gravy for 2 minutes.

Stir the gravy and serve paneer matar malai with chapati...Enjoy!

Threaded Paneer Recipe

Threaded paneer looks complicated, but it's very easy to prepare. Normally this dish is served as a starter at Sunday brunches and buffets across many restaurants in Bengaluru. Here's my take on the recipe serve it with spicy chilly sauce or sambal chutney and Enjoy!

Ingredients Threaded Paneer:
200 Grams Paneer
15 Samosa Patti Sheets
3 TBsp Corn Flour
Oil for frying

Seasoning:
Tandoori Chicken Masala
Mint Masala or Chaat Masala
Chilly Powder
Pepper Powder
Salt

Method:
Chop the paneer into fingers. 
Chop the samosa/ spring roll sheets into thin threads.
Mix the corn flour in some water and prepare a slurry.
Add oil for frying to a wok and place it on medium flame.
In a bowl combine tandoori chicken masala, mint masala, chaat masala, chilly powder, pepper powder and salt. Reserve...

Spread the thinly chopped spring roll threads on a plate.
Roll the paneer fingers in corn slurry shake out excess slurry.
Roll it in the chopped threads and gently drop into the hot oil.
Fry the fingers for a minute on each side keep flipping the paneer and fry until golden.
Drain the threaded paneer from oil and reserve on plate.
Sprinkle with seasoning mix and serve the threaded paneer with sambal...Enjoy!

Paneer Fried Rice Recipe


Paneer fried rice is a popular street food in India. The flavor of cheese and ghee is intense in this rice which pairs well with spicy and crispy fried chicken or french fries.

Ingredients:
1 Cup Basmati Rice (steam cooked)
100 Grams Paneer (Cottage Cheese)
2 Tbsp Schezwan Sauce 
1 Tbsp Soya Sauce
1 Inch Ginger and 10 Pearls Garlic Crushed 
1/2 Cup Finely Chopped Cabbage
1/2 Cup Finely Chopped Bell Peppers
1 Large Finely Chopped Onions
5 Green Chilies Chopped
Salt as per taste
1/4 Tsp White Pepper Powder Optional
1/4 Tsp Vinegar Optional 
1/2 Lime 
5 Sprigs Coriander Finely Chopped 
2 Tbsp Oil 
1 Tbsp Ghee 



Method:
Heat a wok with 2 tbsp oil on low to medium flame. Chop the paneer into tiny bite size cubes. Add the paneer to the hot oil and gently fry on low flame.

Once the paneer has fried till light brown in color using a slotted spoon drain and reserve on a plate.


In the same oil add 1 tbsp ghee and start frying the crushed ginger till raw flavor reduces. Add the chopped cabbage, onion, chilies and capsicum fry till onion turns transparent.

Add the schezwan sauce, soya sauce and salt fry till all ingredients have combined. Add fried paneer and fry for a minute.

Separate and add the rice mix gently till the masala is combined. Allow the rice to heat all the way through. If  you enjoy spicy and sour taste then add white pepper powder and vinegar or mix lime juice and coriander in the rice and serve hot...Enjoy 😊

Paneer Ghee Roast Recipe


Ghee roast is such a classic dish prepared across south it’s either prepared with pepper or dried red chillies. I've prepared the Karnataka version ghee roast recipe. What I love and enjoy about classic recipes is we can alter and add ingredients which we prefer and it still tastes excellent. 

As a recipe developer it is important to change the recipe and incorporate new ingredients to discover new favorite. Ghee roast is normally prepared with muttonfish or chicken, but I have tried to use paneer which turned out utterly delicious. This recipe can be served as a starter or as a side dish for phulkas dosas.

Ingredients: 
500 Grams Milky Mist Paneer
1 Medium Onion Roughy Chopped
1 Large Onion Finely Chopped
1 Tbsp Chilly Powder
1 Tbsp Coriander Powder
1/4 Tsp Turmeric Powder
15 Dried Red Chillies
10 Black Pepper Corns
4 Cloves
1/4 Tsp Fennel Seeds
1/4 Tsp Cumin Seeds
10 Fenugreek Seeds
1/4 Tsp Mustard Seeds
3 Pods Cardamom
1 Inch Stick Cinnamon
3 Sprigs Curry Leaves
1 1/2 Tbsp Ginger and Garlic Paste
2 Tbsp Tamarind Pulp
Salt as per taste
Ghee as required 
Oil as required...



Method:
Use extra malai paneer for this recipe. Chop the paneer into larger chunks. If we chop and use larger chunks panner it retain the buttery texture and absorbs more flavor.

Heat a wok on medium flame. Add 5 tbsp ghee and 5 tbsp oil allow to reach temperature. Gently add 5 to 6 pieces paneer and fry for 30 seconds on each side drain and reserve the paneer on a plate.



Using the same oil and ghee fry the spices, chillies and roughly chopped onions till the onion turns golden in color.

Remove the masala from flame transfer the fried ingredients along with ghee to a mixerjar and grind to form a smooth paste we can add a splash of water to grind into a paste.

Using the same wok place it on medium flame. Add 2 tbsp ghee and 2 tbsp oil allow to reach temperature. 

Fry the curry leaves allow to splutter. Add the finely chopped onions and fry for a minute. Add the chilli powder, turmeric powder and coriander powder and fry for a minute until the raw flavor reduces.



Add the ground masala and fry for a minute. Do not waste the masala paste which is in the mixerjar add 1/2 cup water dilute all the masala and transfer to the frying masala in the wok.

Add salt as per taste stir and allow to reduce on medium flame. Once the masala reduces oil and ghee will surface on the sides. Add the tamarind pulp and stir cook for another 2 minutes. Check for salt and add if needed.

Add the fried and reserved paneer chunks stir and fry for a minute. place on low flame allow the paneer to cook for 5 more minutes. Top with 2 tbsp ghee and serve hot...Enjoy this dish with phulkas or neer dosas.
