Paneer Toast / Paneer Sandwich Recipe

Creamy, gooey and crunchy paneer toast is a very scrumptious and wholesome meal. I prepared this for sunday breakfast, but this delicious toast can be served anytime of the day.

Paneer Toast Recipe Ingredients:
6 Bread Slices
1/2 Cup Grated Paneer
1/4 Cup Grated Cheddar Cheese
1 Finely Chopped Chilli
5 Sprigs Finely Chopped Coriander
2 Sprigs Finely Chopped Curryleaves
1/4 Tsp Pepper Powder
1/4 Tsp Chilly Powder
1/4 Tsp Salt
Oil as required
Prep:
Grate the paneer and cheddar cheese and reserve in a mixing bowl.
Wash the coriander, curry leaves and chilly. Finely chop and it to the paneer and cheese.
Combine the paneer and chopped veggies. Add chilly powder, pepper powder and salt to the paneer, mix well and reserve.
Method:
Place the bread slice on a flat surface.
Spread the paneer filling in a even layer on the slice.
Place another slice and gently press the bread.
Heat a tawa or pan on medium flame. Brush the surface with oil.

Place the bread slice on the tawa and allow it to toast on low flame for 2minutes.
Brush the other side of the bread with oil. Gently flip the bread on the other side and toast  if for few more minutes.
Flip and toast the bread on both sides till golden and serve hot with ketchup...Enjoy!

Southindian Style: Spinach and Mushroom Sandwich Recipe

I enjoyed different textures and taste in this sandwich. The combination of meaty mushrooms and creamy spinach can never go wrong.

Spinach and Mushroom Sandwich Recipe
Ingredients:
150 Grams Mushrooms
150 Grams Spinach
2 Medium Onions
2 Green Chilies
1/4 Tsp Ginger and Garlic Paste
4 Bread Slices
1/2 Cup Grated Cheese
1/4 Tsp Salt
1/4 Tsp Pepper Powder
1/4 Tsp Chilly Powder Optional
4 Tbsp Oil
Prep:

Separate the spinach leaves from hard stems.

Rinse the spinach in water thrice. Add it to a colander and allow excess moisture to drain.

Wash the button mushrooms twice or thrice in water and place it in a colander allow excess moisture to drain. Then spread it on a towel allow the mushroom to air dry.

Peel, wash and finely chop onions.

Separate stems from chilies, rinse in water and finely chop.

Once the moisture from spinach has drained, finely chop and reserve.

Slice the mushrooms and reserve.

Peel and wash equal amounts of ginger and garlic. Add the ginger and garlic to a mixer jar along with 1/4 tsp black pepper and 1/4 tsp fennel seeds, cover and grind to form a smooth paste.

Grate Cheese and place it in a box refrigerated until use. 

Method:
Heat a pan with 1 tbsp oil.

Add the onion and chilies fry till onion turns transparent.

Add ginger and garlic paste and fry the onions till golden.

Add sliced mushrooms and fry till mushroom release moisture.

Add the spinach on the mushroom cover and cook for 2minutes.

Gently stir the mushroom and spinach and fry it on high flame till the moisture evaporates.

Remove the mushroom and spinach masala from flame transfer to a mixing bowl allow it to reach room temp.
Heat a tawa on medium flame.

On a flat dry surface place bread slice, next spread 2 tbsp of mushroom and spinach mixture.

Sprinkle chilly flakes, evenly spread cheese, place another bread slice and gently press.

Gently transfer the sandwich to the tawa, add 1 tsp oil and fry till golden on low flame for a minute, gently flip and add 1 more tsp oil fry till golden. 

Remove the sandwich from flame and serve hot with ketchup...Enjoy!

Sesame Crusted Prawn Toast

Sesame crusted prawn toast served with sweet chilly sauce or a garlic sauce is a excellent starter dish. I dont know what time of the day chinese eat this but I enjoyed this toast for chai. It was filling and very crunchy.

Sesame Crusted Prawn Toast
Ingredients:
4 Slices Bread
300 Grams Prawns
1 Tbsp Ginger and Garlic Paste
1/4 Tsp White Pepper Powder
1/4 Tsp Chicken Masala or Kitchen King Masala
1/4 Tsp Chaat Masala
3 Green Chilies
1 Tbsp Soya Sauce
1 Tbsp Fresh Cream
1/4 Cup White Sesame
1/4 Cup Black Sesame
Salt as per taste
Oil and Butter as required

Prep:
Peel, Devein rinse the prawns in water twice and reserve.
Peel and wash equal amounts of ginger and garlic paste.
Add it to a mixer jar and grind to form a smooth paste.
Remove the stems from chilies and rinse well.
Place the rinsed prawns in a colander and allow excess moisture to drain.
Grind:
In a mixerjar add the prawns grind to form a smooth dough and reserve in a mixing bowl.
In the same mixer jar add ginger and garlic paste, chilies, chicken masala, cumin powder, white pepper powder, salt, soya sauce and fresh cream grind to form smooth paste. 
Transfer the ground masala to the prawn and mix well. Cover and allow the prawns to rest for an hour.
Method:
Spread black and white sesame seeds on a plate and reserve.
Place a tawa on medium flame allow it to reach temp on low flame.
Take the bread slice and start to spread 2 tbsp of prawn mixture on the bread.
Once the prawn spread is evenly spread on the bread gently flip it and place the prawn side on the sesame seeds, with gently hands press and allow the sesame seeds to stick on the prawns.
Make sure the bread slice is evely coated with sesame seeds. IF there are gaps it might tend to crack and fall apart.

Place the bread slice prawn side down on the tawa, add a tsp oil and allow it to fry on low flame for 2 minutes.
Gently flip the bread slice and allow it to fry for another 2 more minutes. Keep flipping and frying the bread slice until golden and remove from the tawa, place it on a chopping board.
Repeat and prepare as many bread slices as possible. Using a sharp knife chop and slice the bread diagonally and serve it hot along with ginger chai...Enjoy!

Besan Masala Toast Recipe

Crunchy and tasty besan bread toast used to be a popular 80's breakfast / tea time snack dish in Bengaluru. These were all home spun recipes.

Besan Masala Toast
Ingredients:
6 to 8 Bread Slices
1 1/2 Cups Chickpea Flour
1 Cup Finely Chopped Onions
1/4 Cup Finely Chopped Coriander
2 Tbsp Finely Chopped Curry Leaves
2 Green Chilies Finely Chopped
1/2 Tsp Chilly Powder
1/4 Tsp Cumin Powder
1/4 Tsp Carom Seeds
1/4 Tsp Asafetida
1 Pinch Cooking Soda
Salt as per taste
Oil as required

Prep:
Peel and wash onions, finely chop and reserve.
Separate curry leaves and coriander leaves. Rinse thrice and finely chop.
Remove the stems from chilies and finely chop.
Batter:
In a mixing bowl add chickpea flour, followed by onions, chillies, coriander, curry leaves, cumin powder, asafoetida, cooking soda, chilly powder, salt and carom seeds mix all the ingredients once.

Allow the batter to rest for few minutes and start preparing the toast.
Shallow fry the Toast:
People who prefer shallow fried bread can try it with my method or you can also choose the healthy route and use a griddle to toast the bread with less oil

Heat a shall pan or wok on medium flame with 5 tbsp oil.

Dip the bread slice in the batter making sure the batter is evenly coated.

Gently drop the bread slice and fry it for 3 minutes on lowest flame, using a slotted spoon flip and fry for 3 more minutes or until golden. Drain the bread slice from oil and serve with ketchup...Enjoy!

Tomato Masala Cheese Toast Recipe

Recreating an old recipe from my early Youtube Days. This tomato masala cheese toast used to be our go to breakfast and evening tiffin. Many things in our life changed and I forgot about this recipe. Recently recreating recipes from 2000.

Ingredients:
Bread slices
2 Large Tomatoes
2 Large Onion
1 Green Chilly 
5 Sprigs Curry Leaves
5 Sprigs Coriander Leaves
1/2 Tbsp Chilly Powder
1/2 Tbsp Coriander Powder
1/2 Tbsp Curry Powder or Chicken Masala
1/4  Tsp Pepper Powder
1/2 Tbsp Salt
Grated Cheese
Oil and Butter as required
Prep:
Peel and wash onion. Finely chop and reserve.

Wash and finely chop tomatoes.

Wash and finely chop curry leaves.

Separate the stems from chilies and wash well. Finely chop and reserve.

Grate cheddar cheese and reserve. 
Method:
Heat a wok and add 2 tbsp oil fry in the ginger & garlic paste fry a bit and tip in the onion and green chillies fry add 1/2 tsp of salt and allow the onion to change into pink color. 

Add the chilly powder, coriander powder, chicken masala and turmeric powder and fry for few seconds.

Add the tomato and fry till it softens, check for salt and adjust to your taste.

Stir and add pepper powder, allow the oil to separate from the masala and remove from flame.

Heat a tawa or a pan and place the slice of bread and spread the tomato masala and layer with cheese slice or grated cheese cover with another slice of bread and add 1/2 tsp of oil to either sides and toast well and serve hot with ketchup. you can also use a toaster and toast the bread. Enjoy!

Egg Pepper Toast Recipe

Pepper toast is spicy version of French toast. We normally prepare this pepper toast for a quick breakfast. I highly recommend to pair this toast with herb tea or masala chai.

Ingredients:
6 Slices Bread
3 Eggs
1/4 Cup Milk
3 Tbsp Pepper Powder
Salt
Ghee
Oil
Method:
In a shallow bowl or plate crack and add the eggs, milk and 1/4 tsp salt whisk to form a smooth batter.
Heat a tawa with 1/4 tsp oil and 1/4 tsp ghee.
Once the tawa reaches temp place on low flame. Sprinkle some pepper powder on the tawa.

Drench the bread slice in the batter and transfer on the tawa.
Flip and fry the bread for 3 minutes on each side till the egg is cooked and the bread turns golden.
Transfer the pepper toast on a plate and serve hot with ketchup...Enjoy!

Bombay Toast Recipe (Sweet Toast)

Bombay toast is Indian version of French toast. The fluffy bombay toast is packed with cardamom and ghee flavor. This toast pairs well with ginger chai.

Ingredients:
6 Slices Bread
3 Eggs
3 Pods Cardamom
4 Tbsp Sugar
1/4 Cup Milk
Ghee
Oil
Method:
In a mixer jar add sugar and cardamom grind to form smooth powder.
Add milk and grind to form smooth syrup.
Crack and add the eggs and grind till all the ingredients are well combined.
Transfer the mixture to a flat plate or flat bowl.
Heat a tawa with 1/4 tsp ghee and 1/4 tsp oil on medium flame.
Dip the bread slice in egg mixture and transfer on the hot tawa.
On low flame flip and fry the bread for 3 minutes till the egg is well cooked and the bread turns golden.
Serve the Bombay toast hot with ginger chai...Enjoy!

Kuboos / Kubus For Shawarma

Kuboos is a flat bread normally served for middle eastern dishes, mainly in shawarma.

Ingredients:
1/2 Cup Maida (All Purpose White Flour)
1/2 Cup Whole Wheat Flour
1 Tsp Yeast
1 Tsp Powder Sugar
1/4 Tsp Salt
3 Tbsp Oil
Method:
Heat 1 cup of water in a pot until Luke warm and reserve.

In a mixing bowl combine maida and wheat flour. 

Add yeast and sugar in the flour and mix well.

Add salt and combine the flour.

Gradually add luke warm water and knead the flour to semi tight dough.

Add 3 tbsp oil and knead the dough until smooth and soft consistency. Cover the dough with a cloth and allow it to rest for 30 minutes before use.

After 30 minutes place the dough in a air tight container and refrigerate until use.
Take slightly larger than lime size dough ball and roll to form a roundel.

Dip the roundel in little flour and roll it out to form slightly thick rotis. Prepare 5 to 6 roti to fry for a batch.

Heat a iron tawa on medium flame. Once the tawa reaches temp transfer the rolled roti to the tawa and fry it for a two minutes on each side, once tiny bubbles form and the roti starts to turn golden remove from tawa and reserve on a plate.

To prepare half cooked kuboos and store it fry the roti for a minute till it for bubbles on both sides then remove from tawa and reserve in a air tight container.

We can reheat the kuboos just before serving or preparing shawarma.

Breakfast Series: Carrot Masala Bread Toast Recipe / Iyengar Bakery Style Masala Bread Roast Recipe


Many of us would stop at a iyengar bakery just to eat a couple of masala toast, before heading to work or school and on our way back home. This masala toast is so popular throughout south. It's simple and very cost effective to prepare at home. We can adjust the ratio of carrots and onion as per preference.

Ingredients:
2 Cups Grated Carrots
1 Cups or 1 Large Onion Finely Chopped
1/4 Cup Green Peas
3 Green Chilies Finely Chopped
1/2 Inch or 1 Tsp Grated Ginger
3 Sprigs Curry Leaves Finely Chopped
3 Sprigs Coriander Finely Chopped
1 Tsp Chilly Powder
1 Tsp Garam Masala can also be substituted with (shakti curry powder, everest chole masala or mdh kitchen king masala)
1 Tsp Coriander Powder
1 Tsp Chaat Masala
1/4 Tsp Mustard Seeds
1/4 Tsp Cumin Seeds
1/4 Tsp Asafoetida
2 Tbsp Oil
100 Grams Butter
1 Pack Cheese Slices 
Salt as per taste
Method:
Heat 2 tbsp oil in a wok on medium flame. 

Add mustard seeds and cumin seeds to the oil and allow to sputter.

Add grated ginger, finely chopped onion, chilies and curry leaves fry all the ingredients until the onions turn transparent.

Add powdered spices, chilly powder, chaat masala, coriander powder, garam masala and asafoetida.

Add green peas and fry all the ingredients until the raw flavors from the masala has reduced.
Add 1/4 cup water, stir and cook the masala and peas until well done.


Allow excess moisture from the masala to reduce.

Add the grated carrot and coriander fry all the ingredients. Adjust the salt as per taste.

Fry the carrots until the masala is well combined. we can sprinkle few spoons water mix well cover and cook the carrots until well done.

Make sure there is no moisture in the carrot masala, remove from flam and reserve.

Take a spoonful of carrot masala and apply on the bread slice in a even layer, while spreading the masala on the bread gently press the masala and apply the sticky texture in the masala will stick on the bread slice it will be easy to roast it on the tawa.

Heat a tawa on medium flame. Spread a spoon full butter on the tawa. Place the masala bread slice on the tawa and fry on both sides until the masala has roasted and the bread is evenly toasted.

We can serve this bread toast with ketchup or ginger chai... enjoy 

We can apply the masala on the bread and arrange the slices on a baking tray and bake it on broil mode or two way baking mode at 180 degree for 10 minutes. Make sure to generously apply butter on the baking sheet before placing the bread on the pan.
