Vasantha Neer Recipe / Tender Coconut Cooler

Vasantha Neer prepared using all natural Ingredients like tender coconut, honey, ginger  and mint, is a prefect summer cooler keeps our body hydrated and helps in healing heat boils.

Ingredients:
2 Cups Tender Coconut Water
2 Tbsp Chopped Tender Coconut
2 Sprigs Chopped Mint Leaves
1/2 Inch Ginger Grated
1 Tbsp Lime Juice
2 Tbsp Honey
Prep:
Wash, peel and grate ginger.

Separate mint leaves from stem, rinse in water twice, drain and pat dry. Chop the mint leaves and reserve. 

Chop the tender coconut or coconut flesh into tiny pieces and reserve.

Wash and chop lime in half, remove the seeds and squeeze the lime juice in a small bowl and reserve.
Method:
In a bowl add tender coconut water, grated ginger, mint leaves, coconut pieces, lime juice and honey stir till well combined.

Take a tall serving tumbler fill it with ice cubes and pour the vasantha neer serve rightaway...Enjoy!

Chia Pradhaman Recipe In Association with Phalada Pure & Sure Organic Food Products


Phalada Company contacted me a month ago to collaborate with them on a product review please click here to see the post. I wanted to use all the products given to me eventually creating recipes. 

Nowadays I tend to track all the recipes created first attempt if it turns out prefect i post it. This recipe was my first attempt and surprisingly the pradhaman was perfect. 

I always wanted to try chia seeds, this was a very good opportunity for me to experiment and try new textures and taste. There is minimal amount of cooking, we may have to adjust the consistency according to taste. 

My mom has been enjoying all their products specially coconut oil and pepper powder, we highly recommend the products from Phalada. Phalada Products are available here or buy on Amazon, flipkart and Big Basket.

Ingredients:
6 Tbsp Chia Seeds
2 1/2 Cups First Extract Coconut Milk or 3 Tins Coconut Milk from Phalada Pure and Sure
1/2 Cup Coconut Sugar or Jaggery


15 Cashews 
1/4 Cup Fresh Coconut Pieces 
1 Tbsp Cardamom Powder
3 Tbsp Phalada Extra Virgin Coconut Oil

Method:
In a mixing bowl add chia seeds, coconut sugar combine well.

Add the coconut milk in batches add 1 half portion of coconut milk mix well allow chia seeds to soak and double in volume for 3 to 4 hours.

Once the chia has doubled in volume check for sweet content if needed add more. Combine the other half of coconut milk and cardamom powder and reserve.

Heat a fry pan with 3 tbsp coconut oil on medium flame. Fry the cashews and coconut in oil on low flame until light brown in color.

Add the fried coconut and cashews to chia seeds mixture and serve right away. If you want to chill this in the refrigerator and serve it chilled then use oven toasted cashews or nuts as coconut oil will solidify and wont be pleasant to taste. Serve the pradhaman right away once the garnish is added...Enjoy 😊


This recipe served 6 generous portions and is 100% vegan. We can substitute almond milk or soya milk incase your allergic to coconut.

 Saffron and Passion Fruit Infused Tender-Coconut Cooler...



Ingredients:
1 Passion Fruit
2 Cups Tender Coconut Water
8 to 10 Strands Saffron
1/2 Inch Ginger Grated
2 Tbsp Lime Juice
Pinch of  Salt
1 Tbsp Diet Sugar (Optional)



Method:
In a mixing bowl scoop and add the passion fruit. Mash the fruit using back of the spoon. Add grated ginger, lime juice, pinch of salt, sugar, saffron strands and coconut water mix well till all ingredients are well combined, refrigerate for 20 minutes before serving. Once the saffron has infused in coconut water serve in a tall tumbler with ice cubes...Enjoy πŸ˜‹


 Passion Fruit, Tender Coconut mojito...


Ingredients:
1 Passion Fruit
2 Cups Tender Coconut Water
Fist Full Mint Leaves
1/2 Inch Ginger Grated
2 Tbsp Lime Juice
Pinch of  Salt
1 Tbsp Diet Sugar (Optional)


Method:

Tender coconut water infused with basil, chilly and orange glucose...

Ingredients:
6 Cups Tender Coconut Water
Fist Full Basil Leaves
3 Tbsp Basil Seeds
1/2 Chilly Finely Chopped
2 Inch Ginger Grated (Optional)
2 Tbsp Lime Juice
Pinch of  Salt
1 Tbsp Diet Sugar (Optional)
3 Tbsp Orange Glucose or Orange Tang



Chilly Basil Infused Coconut Cooler:
In a mixing add 1/2 tsp grated ginger, lime juice, pinch of salt, sugar, 5 to 6 torn up basil leaves, chilly, 1 tbsp basil seeds and coconut water mix well till all ingredients are well combined, refrigerate for 20 minutes before serving. Basil Infused Coconut Cooler:
In a mixing add 1/2 tsp grated ginger, lime juice, a pinch of salt, sugar, 5 to 6 torn up basil leaves, 1 tbsp basil seeds and coconut water mix well till all ingredients are well combined, refrigerate for 20 minutes before serving. Once the basil has infused in coconut water serve in a tall tumbler with ice cubes...Enjoy πŸ˜‹



If Glucose powder is not available in your country please use orange tang powder for this recipe...

Peppy tender coconut, orange and basil infused cooler:
In a mixing add 1/2 tsp grated ginger, lime juice, pinch of salt, sugar, 5 to 6 torn up basil leaves, 1 tbsp basil seeds, 2 tbsp orange glucose powder and coconut water mix well till all ingredients are well combined, refrigerate for 20 minutes before serving. Once the basil has infused in coconut water serve in a tall tumbler with ice cubes...Enjoy πŸ˜‹

NIMBU NARIYAL KI SHIKANJI (LIME AND TENDER COCONUT COOLER)


I crave for mojitos every day since summers have been scorching hot in Bangalore these days and just drinking lime water or alcohol based drinks are getting a bit rhythmic wanted to try something a bit different healthy and tasty i came up with this summer cooler recipe which is totally refreshing best thirst quencher

Ingredients:
2 Tender Coconuts
Fist full Mint
1 Tbsp Lime Juice
1 Tbsp Ginger Juice
1 Liter Bottle any Lime based Soda

Prep Up:
  • To extract ginger juice peel the ginger chop into tiny pieces add to a mixerjar add some luke warm water to the ginger and grind till smooth paste using a strainer pass the ginger pulp to the strainer and extract fresh ginger juice this juice can be store in a air tight container in the refrigerator up to 2 weeks.

Method:
  • In a mixing Jar/Bowl add tender coconut water, lime juice and ginger juice mix and combine all these ingredients till well combined.
  • In a tall tumbler add some mint leaves and ice cubes fill the tumbler half way full with the coconut mixture add the lime soda garnish with lime rings and serve right away...enjoy...:)
