Soups: Sweetcorn Soup Recipe


I'm always in a love-hate mood when it comes to monsoon season, because i tend to enjoy and crave lot of fried food during this season. 

These days for windy and raniy climate, I'm thinking out of the box and prepare only oil free or less oily food to stop my oily food craving. 

I highly recommend everyone to try soups and avoid fried stuff. Sweet corn soup is a family favorite, we keep preparing this either for lunch or dinner and enjoy with some butter toast. Try to avoid frozen corn and use only fresh corn for this recipe.

Sweetcorn Soup Recipe on Vidyascooking Channel πŸ˜€


Ingredients:
1/4 Cup + 1/4 Cup Sweet Corn
1/4 Cup Finely Chopped Onion
1/4 Cup Finely Chopped Carrots
1/4 Cup Finely Chopped Beans
1/4 Cup Peas (Frozen or Fresh)
1 Tbsp Finely Chopped Garlic
1/2 Tbsp Finely Chopped Ginger
1 Tsp Finely Chopped Chilies
1 Tsp Pepper Powder
1 Tsp Parsley
1 Tsp Sugar (Optional)
1 Tbsp Butter
1 Tbsp Salt as per taste...

Method:
In a mixer jar add 1/4 cup sweetcorn and 3 tbsp water, grind to form smooth paste.

Heat a wok on medium flame, add butter and finely chopped onion, garlic, ginger and chilies fry all the ingredients till onions turn transparent. 


Add the veggies leaving 1/4 cup corn to cook later. Add 3 1/2 cups water and cook the veggies until tender.

Add the ground corn and salt and reduce the soup. Add the 1/4 cup corn and cook until tender.

Prepare corn starch, mix 4 tbsp water in corn flour and mix to form smooth paste and reserve.

While the soup in boiling gradually add the corn flour and stir. Boil the soup for 5 to 10 minutes or until the soup thickens and serve as hot as possiable...Enjoy 😊

Homemade Desi Style Popcorn


Just for fun I happen to post...how i prepare popcorn video on insta and on my youtube tamil channel the response was overwhelming and received lot of comments and query so I planned to post a detail blogpost.  

Someone said "Homemade is  Happiness" I believe 100% in that quote. No matter how convenient and affordable products are made it is always satisfying to prepare certain dishes from scratch. I never liked the taste of ready to use popcorn out of a pack since it contains vegetable fat the after taste and feel is waxy. 

If we prepare popcorn the way I have shown, it literally melts in your mouth. This can be prepared and stored upto a week in a airtight container and served as required.

Ingredients:
1/4 Cup Corn Kernels 
Best corn kernels are avaiable at Reliance fresh, Big Basket, More, Thomas Bakery, Geetha Stores and Shivananda stores in Bangalore.
1/4 Cup Sunflower Oil
1 Tsp Maggi Maggi Masala (Optional)
Salt as per taste
2 Tbsp Water


Method:
Heat wok on high flame with oil.
Add the corn kernels and fry until the corn starts to splutter.

Sprinkle water over the corn and stir once.
Cover and cook on high flame allow the corn to splutter and pop.

Once the splutter sound stops remove the lid asap if not the moisture droplets on the lid will drop on the puffed corn making it soggy. Sprinkle salt and masala serve hot...EnjoyπŸ˜‰

#Supacorn Product Review


Hi Friends, I was contacted by Supa Corn company PR in mid march 2017 and was sent a lot of corn samples for tasting and review. I was so impressed with the product hence inspired to create recipes using the corn and wanted to post a complete review after use.


Sweet corn is very easily avaiable at supermarkets or at local grocery markets these days. I normally purchase a large batch and store in fridge. The fresh corn cannot be stored upto a week it tends to turn color and also loose most of its taste but with supacorn since its oxy packed the corn kernels remains fresh until 9 months without refrigeration. There is No preservatives added. 

What I like about supacorn is their option to serve the corn as it is or we can add to any dish. Corn kernels cooks fast under 2 minutes in microwave or we can cook in a pan. We can also consume the corn directly from the packet. 

Supa corn comes with chipotle, peri peri, achari, classic plain corn kernels and corn on cob priced between 34/- to 70/- per pack

Barley Risotto Recipe #SUPACORN


Hi Friends, Risotto is something I order everytime at a Italian restaurant, I love the creamy combination of rice and mushy peas in it but, when it comes to preparing same at home its impossiable the quality of ingredients that we get online and speciality food stores are very costly and not worth a dime, the ingredients I'm referring was good quality arborio italian rice and parmesan cheese. I've tried to improvise and create a delicious risotto using barley making it nutritious and healthy as possible. Barley risotto tastes excellent, this risotto was served for a group of five people.

Ingredients: 
2 Carrots
100 Grams Button Mushrooms
1 Large Onion
3 Green Chilies
5 Cloves Garlic
1 Tbsp Italian Seasoning
1 Cup Cooked Barley
1/2 Cup Cooked Rajma (Kidney Beans)
2 Tbsp Butter 
150 Grams Cheddar Cheese
1 Cup Sweet Corn
100ML Amul Fresh Cream
2 Cups Vegetable or Chicken Stock 
Salt and Pepper powder as required.


Supa Corn is oxy packed remains fresh until 9 months without refrigeration. No preservatives added. What I like about supacorn is their option to serve the corn as it is or we can add to any dish, corn kernels cooks fast under 2 minutes. Supa corn comes with chipotle, peri peri, and achari flavor apart from the classic plain corn kernels and corn on cob priced between 34/- to 70/- per pack.

Method:
I have pre soaked the barley and kidney beans over night, pressure cooked barley and kiney beans seprately with 2 cups water and reserved.

Heat a heavy bottom base pan on medium flame I used a pressure pan, add 2 1/2 Tbsp butter. Add chopped garlic, onion, chillies and carrots fry for a minute.

Once the onion turns transparent and carrots soften a bit add chopped mushrooms and italian seasoning stir and allow to cook for another quick minute.

Add cooked kidney beans, barley and corn, add2 cups vegetable stock or water stir and place on low to medium flame cook for 10 minutes.

Once all the ingredients have cooked for 10 minutes add salt and fresh cream, reduce excess moisture on high flame keep stirring.

Add grated cheddar or parmesan cheese. Once the cheese is added stir and switch off the flame allow the cheese to melt and serve hot...Enjoy 😊

Peri Peri Sweet Corn Kosambri Recipe (Southindian Style Corn Salad) #Supacorn


Kosambri is a healthy and refreshing traditional salad which is served during festivals or prepared during summer. Kosambri is normally prepared with raw mango, cucumber and soaked mung dhal (soaked split mung beans) tempered with mustard and garnished with freshly grated coconut and coriander. 

After receiving entire range of corn from supa corn I was planning to create a mashup recipe (two different flavor combinations or two completely different dishes combined is called mashup recipe). My plan was to use Peri peri masala it has always been my favorite spice blend.  Please click here to view my corn kosambri recipe posted in 2010.

1 Packet Peri Peri Supa Corn
1 Packet Plain Supa Corn 
1/2 Cup Fresh Pomegranate Seeds
1 Cucumber 
1 Medium Onion
3 Carrots
2 Chilies
10 Raisins
1 Tbsp Mustard Seeds
1/2 Tsp Asafoetida
1/2 Cup Fresh Coconut
 1/2 Lime
2 Sprigs Curry Leaves
2 to 3 Sprigs Coriander Leaves
2 Tbsp Oil
Salt as per taste

Method:
Peel and wash and finely chop the veggies...carrots, onion, chilies, coriander and cucumber. Heat a pan with 1 tbsp oil on medium flame.

Add mustard seeds to the hot oil allow to splutter and reduce.
Once the mustard seeds stops spluttering add asafoetida and curry leaves fry for a second and add the sweet corn along with the peri peri masala stir and cook for a minute.

Remove the corn from flame allow the corn to reach room temperature. Add coconut to a mixer jar and grind to form grated coconut.

Once the corn has cooled to touch add the chopped veggies, Pomegranate Seeds, grated coconut, raisins and chopped chilies mix well and adjust the salt just before serving. Add lime juice and salt mix the salad well and serve...EnjoyπŸ˜‹

Sweet Corn Kosambari (Southindian Salad)


Ingredients:
1 Cup Corn, Pomegranate Seeds, Carrots, Cucumber, Apple, Onion, Grated Coconut
2 Tbsp Golden Raisins
2 Green Chillies
1 Tbsp Lime Juice
1 Pinch Asafoetida
Salt to taste.


Lets Prepare:
Peel and de-seed the cucumber and chop into small cubes.
Cut Onions and carrots into small pieces.
Core the apple and cut into cubes.

Freshly Grate the coconut.
Steam the corn with little salt for 5 mins and rinse twice in cold water.

In a wide bowl add all the ingredients and mix well mix the asafoetida and lime juice and add to the salad add salt as per your taste mix well and garnish with either coriander or candied cherry serve as side dish with any south indian meal...Enjoy...:)
