Vasantha Neer Recipe / Tender Coconut Cooler

Vasantha Neer prepared using all natural Ingredients like tender coconut, honey, ginger  and mint, is a prefect summer cooler keeps our body hydrated and helps in healing heat boils.

Ingredients:
2 Cups Tender Coconut Water
2 Tbsp Chopped Tender Coconut
2 Sprigs Chopped Mint Leaves
1/2 Inch Ginger Grated
1 Tbsp Lime Juice
2 Tbsp Honey
Prep:
Wash, peel and grate ginger.

Separate mint leaves from stem, rinse in water twice, drain and pat dry. Chop the mint leaves and reserve. 

Chop the tender coconut or coconut flesh into tiny pieces and reserve.

Wash and chop lime in half, remove the seeds and squeeze the lime juice in a small bowl and reserve.
Method:
In a bowl add tender coconut water, grated ginger, mint leaves, coconut pieces, lime juice and honey stir till well combined.

Take a tall serving tumbler fill it with ice cubes and pour the vasantha neer serve rightaway...Enjoy!

Ingredients:
250 ML Mango or Pine apple Juice
250 ML Litchi Juice
1/4 Cup Finely Chopped Apples
Mint Sprigs
Ice Cubes

Prep:
Wash the reuseable icecubes with soap water and rinse well then pat it dry and place it in the freezer to harden and form ice cubes.

Wash the apple and finely chop.

Separate mint leaves rinse well and reserve.

Method:
Place the icecubes in the glass.
Pour the mango/pineapple or orange juice of choice.
Next top it with litchi juice and garnish with finely chopped apple and mint...Serve...Enjoy!

Red Grapes Shikanji Recipe / Grape Soda Recipe

This spicy shikanji pairs well with fried starters, rice and curries or with naans and curry. Shikanji is good for digestion overall a very good homemade drink.
Red Grape Shikanji Grape Soda:
Seedless Red Grapes 250 Grams
Sugar 250 Grams
1 Tsp Chilly Powder
1 Tsp Pepper Powder
1 Tsp Cumin Powder
1 Tsp Salt
1 Tsp Chaat Masala
1 Tbsp Lime Juice
Club Soda

Prep:
Separate and rinse the grapes twice in salt water.
Rinse the grapes once again in plain water, drain and reserve.

Boil a 2 cups water and reserve.

Prepare ice cubes.
Grape Concentrate:
In a heavy bottom pot or wok, add the grapes and sugar, stir once cover and cook until the grapes have cooked till mushy consistency.

Strain the grape pulp and syrup and reserve separately. Once the grape pulp cools down transfer to a mixer jar and grind to form a smooth pulp.

Using a sieve strain the ground pulp. Add the strained pulp to the syrup and stir well. If needed we can strain the pulp with hot water which was reserved.

Transfer the grape juice to a bottle and place it in fridge until use. We can store this upto 3 weeks.
To Prepare Grape Shikanji / Grape Soda:
In a small bowl or dish combine chilly powder, cumin powder, chaat masala, pepper powder and salt.

In a serving glass add 1/4 cup grape concentrate. 

Add 1/4 tsp prepared masala mix, stir well.

Add ice cubes and stir well.

Add chilled club soda, stir and serve grape soda...Enjoy!

Grape Shikanji Recipe

Shikanji is normally served for digestion and its a palate cleanser. This grapes shikanji pairs well with kababs and spicy grills.

Grape Shikanji Ingredients:
1 1/2 Cups Seedless Grapes 
3 Tbsp Sugar
1 Tsp Chilly Powder
1 Tsp Pepper Powder
1 Tsp Cumin Powder
1 Tsp Salt
1 Tsp Chaat Masala
1 Tbsp Lime Juice
Club Soda
Ice Cubes

Prep:
Wash the grapes and place in a colander allow excess moisture to drain.
Wash and chop the limes into half, squzee the lime juice in a bowl and reserve.

Method:
Add the grapes in a mixer jar, followed by sugar cover and grind to form a smooth paste.

Place a sieve on a bowl, transfer the ground puree to the seive and strain.

Add 1/4 cup grape concentrate to a serving galss, followed by 5 to 6 ice cubes, chaat masala, cumin powder, pepper powder, chilly powder, salt and lime juice stir all the ingredients. 

We can use club soda or ginger ale. Fill the glass with club soda and stir once. sprinkle chaat masala and chilly powder on top and serve.

Beetroot Lassi Recipe

Beetroot Lassi pairs well with Indian cuisine, specially biryanis, pulaos , grilled meats, curries and buttery naans...

Ingredients Beetroot Lassi:
1/4 Cup Washed, Peeled and Chopped Beetroot
Tiny Piece Ginger Peeled and Washed
1 Green Chilly
3 Sprigs Coriander Leaves
1 Sprig Curry Leaves
2 Sprigs Mint Leaves
1 Tsp Cumin
1 1/2 Cups Yogurt
1 + 1/2 Cups Water

Method:
In a mixer jar add the chopped beets, ginger, chilly, coriander, mint, cumin powder and salt cover and grind to form a smooth paste.

Add water and grind to form a paste.

Add yogurt and water grind and pour the beet lassi in a tall tumbler...Garnish and decorate with a mint leave and serve...Enjoy!

Real Fruit Slushies Recipe (Mango & Papaya)


Real fruit slushies can be slightly tricky to prepare, provided you follow few steps. My all time favorite thirst quencher and healthy summer treat are slushies. 

Slushies that we get in cafes, juice centers and icecream shops have very less to no fruit and is prepared with just sugar syrup and flavorings. Better to avoid store bought slushies and prepare it your self.

Normally when we tend to buy fruit in bulk it tends to ripen fast and spoil, I normally make use of  all overripe fruits for slushies and smoothies which is not edible it is perfect for such recipes. 

Best fruits for slushies are Mango, Papaya, Watermelon, Strawberry, Lime, Grapes, Kiwi and Oranges. We can also prepare alcohol based slushies following same method. 



Ingredients for Mango and Papaya Slushie:
150 Grams Ripe Papaya
150 Grams Mango (Malika or Banganpalle) 
150 Grams Sugar / Honey or Diet Sugar
250 ML Water



Method: 
Peel, deseed and wash the fruits.

Chop into large chunks.

Add the fruit along with sugar to a mixerjar and grind to form a smooth puree.

Transfer the fruit pulp to a steel container and freeze for 3 to 4 hours.


The fruit pulp will not freeze all the way, use a fork or whisk to break the frozen fruit.

Add water in small portions and stir well. Whisk until the fruit is well combined with water.

Place a cover and freeze it until crystals form.

Using a knife break the crystals and add to a mixer grinder, blend until a even slush is formed.

Serve the slushie right away in a tall tumbler and enjoy...😊

Papaya is a versatile fruit we can add any natural flavours like rose water or cardamom powder. Papaya can be combined with other fruits for volume and texture in slushies.

 Ingredients for Papaya Slushie:
150 Grams Ripe Papaya
150 Grams Sugar / Honey or Diet Sugar
150 ML Water
We can use Rosewater or Cardamom powder to enhance the flavor


Method:

Street Food Series: Mosambi Pani Puri Recipe (Sweet Lime Pani Puri)


Be it summer or winter all of us in India love mosambi juice. Mosambi or musambi is harvested during autumn this lime is available in abundance between october till november. Mosambi is sweet lime variety exclusively used for juicing and specially offered to Goddess Durga during dussehra festival. 

Using this seasonal sweet lime I created a flavorful pani puri recipe. Mosambi juice has perfect balance of sweet and sour content, when spiked with chaat masala it enhances the taste.

Ingredients:
2 Packs Ready to Use Pani Puri Shells
5 to 6 Ripe Mosambi
2 Medium Size Boiled Potato
1 Cucumber
2 Tomatoes
3 Medium Carrots
5 Sprigs Spring Onions
Fist Full Coriander Leaves
2 Large Onions
1 Tbsp Rasam Powder or Chilly Powder
1/2 Tsp Pepper Powder
3 Tbsp Chaat Masala or Pani Puri Masala
1/4 Cup Salted Roasted Peanuts
1 Cup Kara Sev
Salt as per taste.



Prep Up:
Peel, wash, deseed and finely chop the cucumber.
Cut mosambi into halves. Using a juicer extract mosambi juice.
Peel, wash and finely chop onions.
Wash, deseed and finely chop tomatoes.
Wash the greens well pat dry and finely chop the coriander and spring onions. 
Wash, Peel and Grate the carrots, reserve.



Prepare Mosambi Pani:
Add 1/2 tsp chaat masala and pinch of pepper powder to the mosambi juice stir well.

Taste the juice and add salt accordingly since the chaat masala already contains salt.

Add a tsp full of finely chopped coriander stir well allow all the flavors to infuse in the juice we can refrigerated until use.


Once the puri filling is ready we can serve the pani garnished with coriander and sprinkle a pinch of chaat masala and rasam powder on top.


Prepare the Puri Filling:
Before mixing the potato filling reserve a portion of grated carrots, finely chopped coriander and onions for garnishing.

In a mixing bowl combine finely chopped cucumber, tomato, onions, coriander, spring onions, grated carrots, boiled and crumbled  potato.

Add 1 tbsp chaat masala and 1 tbsp rasam powder or we can use chilly powder. combine all the ingredients check for salt and add if needed.


Create cavity in the puri, fill the puri with potato masala. Garnish with finely chopped onions, grated carrots and coriander. Just before serving fill with sev and peanuts, sprinkle rasam powder and chaat masala serve right away with mosambi pani...Enjoy 😊

Bengaluru Style Mango Milkshake Recipe

I prefer using mallika mangoes in milk shakes and recipes since these mangoes are packed with flavors and it’s locally grown. There is a difference from locally harvested mangoes vs early harvested and shipped ones. 
 Mallika mangoes are harvested end of April and avaiable in local mango melas, supermarket and stores from June till end of July.

Ingredients:
1 Liter Milk + 1 Cup Milk
100 Grams Pack Fresh Cream
3 to 4 Mallika Mangoes
3 to 6 Tbsp Sugar
1 Liter Mango Ice cream
Cherries for garnish 

Please adjust the sugar content as per the sweetness in mango. At times few mangoes will taste bland we need to increase or reduce the sugar level as per choice.


Prep:
Boil 1 liter milk, reduce a bit on low flame. 

Remove milk from flame allow to reach room temperature, place the milk pot in the freezer allow to form solid milk ice cubes.

We can break these milk ice cubes into small pieces using a knife just before preparing milk shake.

Wash and pat dry the mangoes. using a potato peeler, peel the mango skin.

Chop the mangoes in larger chunks for milk shake and use two slices of mango to chop in smaller pieces for garnish.
Method:
In a juicer jar add the larger chunks of mango. Add sugar and icecream blend to form a smooth puree.

Break the frozen milk into smaller, blendable cubes and add to the mango puree.

Grind till the milk is well incorporated with the mango.

Pour the mango in serving glasses leaving a little gab for a scoop of mango icecream and mango.

Garnish the milk shake with a scoop of mango icecream and top with mango pieces, just before serving top with fresh cream and cherry. Serve right away...Enjoy😉

Sharjah Shake Recipe (Banana Chocolate Milk Shake)


Sharjah Shake prepared with natural ingredients, perfect energy drink served during summer. This is a thick milk shake, a complete meal on its own.

Ingredients:
3 Ripe Banana (Robusta or Kerala Butter Banana)
3 Cups Milk
1/2 Liter Vanilla or Chocolate Icecream 
3 Tbsp Diet or Regular Sugar
5 Tbsp Horlicks (We can also use Boost, Bournvita, or Milo)
6 Tbsp Hot Chocolate Powder
1 Tbsp Khus Khus/Gasagasa/White Poppy Seeds
15 Cashews 
4 to 5 Tbsp Roasted Salted Peanuts
Garnish: Candied Cherry, Salted peanuts, Vanilla Icecream, Chopped Almonds and Cashews


Method:
1. In a mixer-jar add poppy seeds, hotchocolate powder, roasted peanuts, cashews, sugar and horlicks grind to form smooth powder

2. Add peeled and chopped banana to the ground powder blend to form a smooth paste. Do not add water or milk for grinding.

3. Add vanilla icecream to the ground banana blend to form a smooth paste.

4. Add milk to the ground banana mixture whisk till all ingredients are well combined.


5. Divide and transfer the milk to tupperware containers freeze till the milk forms crystals.

6. Once the milk sets breaks and mix the milk add to a mixer jar grind to form smooth milk shake.

7. Serve the milk shake in a serving glass top with two scoops icecream. Garnish with salted peanuts and cherry serve right away...Enjoy :)
