Christmas Brew @The Biere Club - Lavelle Road, Bengaluru


It was a "Merry Christmas Ale at The Biere Club". On a brisk Saturday morning I was so excited up and about to learn How to brew the specially crafted Christmas ale. We were introduced to youngest brew master Rohit Jairam who gave us lot of information on beer brewing and so on. We got to see entire process from start to finish. First up in a mill dry roasted malted barley was crushed and added to temperature controlled RO Purified water.

The malt water is automatically transferred to a vessel where the mashing started. The malted liquid is then boiled where the malt starts to release sugars. The malt is filtered and transferred to a another drum finally hops and yeast is added from there powdered spices like nutmeg, cloves, cinnamon are added along with orange rind and allowed to soak and ferment for 25 days before serving. 

They were brewing about 500 liters of beer at once. After a walk through on brewing beer we got to taste some fresh Christmas ale. The beer was flavorful but not overwhelming, the long lingering finish, had caramel-malt and apple flavors in the beer. Just served alongside with their signature starters pigs in blanket, corn curd, and paneer satay tasted absolutely yum. The Christmas ale will be served on 25th December 2015 do try this yummy concoction its one of a kind brew... very unique, I've never tasted such a warm soothing packed with flavors beer before.

Restaurant Review- Tom Yum Thai @Indiranagar Bengaluru


Tom Yum Thai is located at 725, 4th Floor, Above Clinrad Diagnostics & Research Center, CMH Road, 1st Stage, Defense Colony, Indiranagar, Bangalore.  I loved most of the dishes here it was packed with fresh flavors super healthy (not oily)...excellent pricing and decent portions can be shared among 3. 

The Wine: We picked two wines. First was the Yellowtail - Pink Moscato Wine from Australia the Rosé wine was crisp bit dry I enjoyed the sweet cherry flavor wine paired excellent with spicy thai dishes. Second wine was Two Oceans - Chardonnay from South Africa was crisp and acidic paired well with tangy thai dishes. 

Food: The starters were versatile it can be just a starter or served as a side dish with steamed rice the sauce/gravy was excellent with rice. some dishes were really hot make sure to ask the heat level before ordering. Must try dishes are the Thai Basil chicken, Raw Papaya salad, Cashew Tofu, Tom Yum Soup, Pad Thai, Thai Green Curry with rice. There was a special treat by the end of our meal we tasted Ideal ice cream from Mangalore what more can I say it was simply brilliant.

Ambiance: with a view is always a winner they have indoor and outdoor seating we absolutely enjoyed the misty rains and out door seating.

"Tom Yum Soup" The National dish of Thailand was prepared with chicken broth mushrooms spicy chilly and lemon grass yummy soup it was so soothing.

"Gai Pat King" Whew was super hot totally enjoyed the sauce and addition of fresh mint.

"Gai Pad Gratiem Prik Thai" Crunchy Garlic and Pepper topped on Chicken 

"Yum Phak Tahu Tod" Fried Tofu and vegetables in Cashew nut Sauce

"Pak Raumit" Stir fried vegetables in light soya sauce with black pepper and garlic

"Gai Pad Kra Pao"Thai Basil Chicken

"Yod Kao Pod Phad Hed" Stir Fried Mushroom in Black Pepper Sauce 

"Hor Mok Talay Ma-Praow On"  Seabass, Squid and Prawns..This is a mixed Seafood Steamed Curry inside Young Coconut. Very unique curry tasted so far excellent with rice..My suggestion would be spicy thai noodles with this curry.


"Pad Thai With Tofu" Flat Rice noodles in spicy tamarind sauce was tangy/crunchy was everything I craved on that rainy day.

"Thai Green Curry" Was prepared to perfection it had eggplant tofu and baby brinjal creamy thai green curry was excellent with steam cooked rice

Ideal Ice Cream From Mangalore Chocolate and Vanilla
Over all we loved the food. Like a true Asian restaurant they have plenty of veg options on the menu.

Achari Chicken Tikka Recipe


There are different types of kababs served across India, One such outstanding kabab which is always a crowd pleaser is achari murgh tikka. Achari is a pickle spice mix which is freshly ground and marinated in the chicken before grilling. The flavors and tangy taste in this kabab is excellent. I prefer to serve this kabab with southindian style lemon rice.

Ingredients:
500 Grams Boneless Chicken 
1/2 Cup Yogurt
1 Tbsp Chilly Powder
1/2 Tsp Turmeric Powder
1 Tbsp Garam Masala
10 Pods Garlic
1 Inch Ginger

Achari Masala: 1 Tbsp Mustard seeds, 1/2 Tsp Fennel, 1/2 Tsp Cumin, 1/4 Tsp Carom, 1/4 Fenugreek, 1 tsp Nigella seeds
Juice of 1 Lime or 1 Tbsp Lime Juice
Salt as per taste
Sunflower oil 2 +1 Tbsp
Mustard Oil 1 Tbsp

Method: 
Cut the chicken into bite size pieces wash thoroughly allow the excess water to drain and reserve in a mixing bowl.

Add Lime juice, yogurt, chilly powder, turmeric powder, garam masala and salt to the chicken mix well cover allow to marinate for 1 hour. Place in the refrigerator.

Heat a wok/fry pan on medium flame add 1 tbsp oil add the spices mustard, fenugreek, carom, cumin, fennel and nigella fry till the spices splutter.

Once the spices splutter add the ginger and garlic fry for a minute. Transfer the spices to a mixer jar add a splash of water and grind to a smooth paste.

Add the ground masala to the chicken mix well cover allow to marinate over night for best results or can prepare the tikkas in 2 hours time this masala has to penetrate well inside the chicken.

Heat a pan on medium flame add mustard oil and sunflower oil allow the oil to reach at smoking point. 

Add the chicken to the oil fry for 2 minutes on each side the chicken should absorb the oil and the masala will coat the chicken thoroughly.  

Transfer the chicken to a baking sheet place it in a preheated oven at 200 degrees for 10 minutes. we can flip the chicken  at 5 minute mark and bake till well done. Serve hot with lime and onion...Enjoy...:)

We can also grill this chicken tikka on tawa/skillet if you do not have oven. If  you plan to grill on coals keep basting with oil and grill until well done.

Mixed Vegetable Bread Canapes


We can fill these canapes with any stuffing like mutton, chicken or fish... I chose mixed vegetables. Prepared this third time since diwali my friends and guests during diwali  totally appreciated this starter recipe and now its a family favorite snack during tea time.

Ingredients:
1 Loaf Bread any kind
2 Tbsp Butter
2 + 2 Tbsp Oil 
1 1/2 Tbsp Ginger and Garlic Paste
Finely Chopped Mixed Vegetables 2 Cups (carrots, capsicum, cabbage)
1/4 Cup Sweet Corn
1 Large Onion Finely Chopped
3 Chilies Finely Chopped
Grated Cheese Mozzarella or Cheddar
1/4 Tbsp Curry powder or Garam masala
Salt as per taste


Method: Heat a wok on medium flame with 2 tbsp oil.
once the oil is hot add ginger and garlic paste fry until the raw flavor has gone.
Add finely chopped onion and chilies fry until the onions turn light pink in color.
Add the carrots and capsicum fry until the carrots soften a bit.
Add the cabbage fry a bit do not add water since the veggies already contain enough moisture the veggies will cook under 2 minutes.
Once the cabbage has reduced a bit add corn and salt as per taste if needed add pepper powder stir and fry the veggies on low flame until cooked.
Add curry powder and fry a bit remove from flame and allow the veggies to cool.
Take 2 bread slices using a cookie cutter or a lid cut into equal disc take one disc using a smaller cookie cutter cut the cavity.
Apply butter to the base add cheese and place the second slice with cavity. fill the cavity with veggie filling and top with bit more cheese.
Brush little oil to the sides and bake at 200 degree mark for 10 minutes or until the bread is toasted well.
Serve hot as a snack during tea or as a starter enjoy...:)

Review - MAJLIS Restaurant @Kammanahalli Bengaluru


Majlis is a Indo-Arabic restaurant located at Kammanahalli CMR Road, HRBR Layout, Bangalore. The menu looks interesting consisting a mixture of Lebanese and Indian dishes curated by Celebrity Chef Ashfaque Quereshi and Chef Irfan Quereshi. I must consider myself the most luckiest person who actually chatted very causally with the chefs they are here to launch Majlis with co-owner Harish Lakhiani. Harish Lakhiani also owns two other restaurants Mango tree and Mezze located at indiranagar Bengaluru, The causal dine/pocket friendly restaurant is surely going to be the talk of  the town.

We Started our tasting with Mezze Platter which consisted of Turkish Salad, Hummus, Babaganoush, Tabbouleh and Pita bread.

After a wondeful mezze platter we tasted few starters..Dahi Ki Kabab, Rajma Ki Galouti Kabab, Malai Murgh Kabab, Cheese Sambousak.

For mains we tasted Murgh Bemisal (Butter Chicken), Mutton Rogam Josh, Goan Fish Curry, Dal Tadka, Butter Naan, Zar-e-Bariyan Biryani.

For Dessert we had Umm Ali (Phirni).

Overall I liked the food specially the starters it was authentic prepared to perfection. Packed with flavors the quality of food  and service was excellent. I'm planning to visit again and taste more dishes here.
