FAVA a Mediterranean restaurant located at UB CITY-Bengaluru, featured a very refreshing, colorful, packed with flavors micro greens salad.
Tiny tubs containing fresh shoots of sunflower, mustard, radish and beetroots are grown on a bed of coconut coir dust. Who knew the tiniest shoots are packed with big flavors. This salad was absolutely delicious. Apart from being fresh and delicious the salad is packed with vitamin E, C and K.
Chef Abhijit Saha Says tiny micro greens are packed with nutrients it can be grown easily at home. I'm so happy to share a wonderful recipe on International World Yoga Day...

We also need to prep up some lettuce and lolla rossa in a salad bowl. Just wash the lettuce thoroughly place it in ice water for a minute then spin the leaves in a salad spinner to remove excess moisture and reserve in a bowl...
Trim the micro greens on the salad leaves directly. Since the shoots are tender we cannot touch or handle to much. These greens may tend to loose its texture and will get mushy from the heat of our palms...
Top with roasted almonds and halved cherry tomatoes. Dress the salad with balsamic vinegar and olive oil add some seasoning salt and pepper toss the salad. Garnish with grated parmesan cheese serve...Enjoy...:)

I was invited for ongoing dimsum festival at high ultra lounge which is located at Melleshwaram. The tasting session started with a choice of cocktail and fried basil chicken jiaozi's followed by steam cooked dimsums ending with a crispy dragon jiaozi.
Chef Myo who has strong roots from Burma and Myanmar explains dimsums were exquisite snacks served at tea houses across china. Chef adds when I first came to bangalore and strolled around the market areas to get familiar with the local produce always wanted to incorporate and create delicacies around locally avaiable produce. For example turmeric, chilly powder and spinach are few ingredients incorporated in these dimsums.
Bengalureans are huge fan of butter so we've created a pork and butter dimsum. The dimsum sheets/skin it self has natural colors from trumeric and spinach.
I also asked Chef Myo How are these dimsum sheets created how do they have high glossy finish after steaming?? We use only wheat gluten, Potato starch and tapioca flour these are common ingredients used in the making we ship these products from thailand...
Chef Rabi adds dimsums are my favorite. We've incorporated many locally sourced ingredients to create the ultimate dimsum experience. Our mixology team are also ready to create cocktails that would pair well with our dimsums.

The Fried jiaozi with a thai twist. Stuffed with chicken and peanuts toppe with thai red curry sauce and papaya salad was crispy very tasty.
Next came the vegetarian version with corn, nuts, mushroom and spianch served with thai green curry sauce and topped with papaya salad.
Dipping Sauces: Coriander steams and chilly sauce, Soy and chilly, Ginger and chilly were perfect dipping sauce for steam cooked chewy dimsums...
The next comprised chicken pork and prawn dimsums with garlic and corriander flavored fillings.
Followed by a selection of vegetarin dimsums comprised of tofu, corn, mushrooms, waterchesnuts, spinach and nuts flavored with ginger and garlic.
Our dimsum tasting ended with crispy dragon jiaozi which was stuffed with chicken and served on a bed of plum reduction topped with papaya salad. Over all I felt it was a combination of different flavors. A cantonese dimsums with thai flavors and local produce was amazing prefect to pair with many dishes and cocktails on their menu.

cafe and restaurant recently launched their new menu. The restaurant
hosted us for an exclusive new menu food tasting session.
Cafe Mangii has Indianise their offerings
to suit the palate of the consumer. When I asked, the marketing head of the
company what was the whole concept behind a new menu. She said, it’s all
about keeping up with the trend and offering a variety to our guests. Chefs are
very creative and keep updating our menu constantly as per the season. The chef
has curated many dishes from locally sourced produce because it’s very
important for us the locals to feel welcomed. In the food industry when a
customer leaves contented next minute we see he or she post about us on
social-media it completely transforms our day that's what we strive for.
Cafe Mangii has curated many dishes with
ingredients people are familiar with food served to me was not fussy it was
straight forward simple elegant food on my plate.

We started our tasting session with Guava and Strawberry Garnita perfect cooler for summer. Packed with ice spiked with a hint of mint and sprite was refreshing.
Cafe Mangii Bread Rolls are the best its freshly baked at the restaurant served with herb butter and balsamic vinger.
Next Came the Amuse Bouche a Cheese Platter and watermelon cups.
Cheese Platter consisted brie, emmental, cheddar, chevre, gala grapes, cured olives,lavash crackers, crostini, walnuts and apricots.
Water melon cups : filled with feta fondue, arugula, pine nuts, aged blasamic reduction. Very innovative way to present watermelon salad i liked the concept.
After tasting a variety of swiss cheese and water melon cups. We were served soups...
Potage Parmentier: Creamy leek and potato soup topped with crispy spinach...
Roasted Bell Pepper: Creamy bell pepper soup spiked with a hint of basil served with melba toast.
Both the soups were delicious and comforting. After tasting the soups a generous portion of apple salad was served.
Apple Salad: Gala and granny smith slices of apples tossed in fennel slaw, cranberries and sunflower seeds dressed with dijon mustard dressing. A crispy and refreshing salad packed was packed with flavors. Up next was small plates...
Small Plates- Gorged mushrooms: parmesan and herbed cream cheese stuffed mushrooms.
Crostini di polenta: grilled parmesan polenta cakes topped with peperonata and chive aioli.
Baked jalapeno molten: cream cheese stuffed jalapenos, topped with salsa verde and sweet paprika garlic sauce.
Jerk chicken olivetti: scotch bonnet peppers fumed chicken supreme with jerk mayo and pina colada dip.
We were not disappointed with the appetizers loved the bite size potions was packed with different flavors and taste. After tasting an elaborate spread of appitizers the mains followed...
Grilled Cottage Cheese Steak: Olive and cilantro tapenade, tomato risotto, and saffron beurre blanc.
Cottage cheese/ paneer grilled with a mixture of olive oil and herbs topped with creamy tomato rissotto served in a bed of butter saffron sauce. This dish reminded me of a classic tomato biryani minus the spices the combination of all the flavors from the dish was amazing.
Pollo Lombardy: Chicken immersed in marsala wine and mushrooms. Grilled with mozzarella cheese and served with side of mashed potato and grilled asparagus..
Lemon pepper basa: Butter poached basa fillets, served on a bed of zucchini fritters and lemon butter sauce.
Saffron Al Fungi: Garlic cream saffron Risotto with buttery shiitake mushrooms, spinach and mushy peas...
Fusilli Mamarosa: Fusilli pasta tossed in smoked creamy tomato sauce, pimentos, grilled chicken and broccoli florets...
We enjoyed the main course and tasting over all a wonderful combination of flavors and taste. There was still room for desserts and concluded our tasting session with baked cheese cake and velvet brownie.
