Keema Golgappa (Keema panipuri)

Dedicating this recipe to all my golgappa and panipuri lovers out there. I got to taste this golgappas at Prost Brew Pub...Hats off for the innovation. Not only Golgappas I'm totally in love with all the starters on their menu.
I changed a few things here and thereacting like a typical food blogger...come on! I cannot copy the same recipe on my blog bit of tweaking here and there is no harm...give the humble aloo and matar filling a break and try my meat filled golgappas twist you'll love it..

10 to 15 Golgappas
150 Grams Mutton or Chicken Keema
2+1 Onions Finely Chopped
1 Cup Chopped Capsicum
1/2 Cup Sweet Corn Steamed
1 Large Par Boiled Potato Chopped into Tiny Cubes
3 Chilles Finely Chopped
Fist Full Mint and Coriander Chopped
1 Tbsp Chilly Powder, 1 Tbsp Chaat Masala, 1 Tbsp Garam Masala, 1 Tbsp Coriander Powder, 1/4 Tsp Turmeric Powder
1 Tbsp Ginger and Garlic Paste
Salt as per taste
Oil as required
Aloo Bhujiya for garnish. we will also require shot glass to present the golgappa
Mint Chutney:
Fist Full Mint
1 Chilies
1/2 Tsp Cumin
1/2 Tsp Anardana, lime or yogurt
Salt as per taste
Method for Mint Chutney:
- Add all the ingredients to a blender and grind to a smooth paste after grinding place it in a tupperware box and refrigerate.
- Adding anardana to mint chutney is classic its my favs if you cant find the seeds please substitute with lime juice or yogurt.
- In a wok add 1 tbsp oil. place the flame to medium.
- Reserve about 4 tbsp onion and add the rest to the oil fry a bit once the onion turns transparent.
- Add ginger garlic paste, chilies and the dry spices along with the meat toss and fry till meat releases its juices.
- Measure and add about 1/2 cup water cover and cook the meat.
- Once the meat is cooked add salt as per taste place the flame on high and allow the excess moisture to dry out once the meat is done reserve.
- Heat about 1 cup oil in a wok on low to medium flame.
- Add the aloo in batches and fry till light brown and crisp. once done strain and reserve the fried potato on a paper towel.
- Reserve the oil for reuse clean the same wok add the capsicum and corn to the wok toss to fry a bit add 1 pinch of chaat masala and 1/2 tsp of chilly powder toss and fry add salt reserve this corn mixture.
Lets Assemble:
- Break and create a cavity on the golgappa or you can use a serrated knife to saw and create a cavity in the golgappa.
- Add the reserved onion, salt, aloo, 2 tbsp mint chutney, chopped coriander and mint to the corn mixture toss and coat
- Present the aloo chaat in a shot glass also add a spoon full inside the golgappa.
- Add a spoon full of keema inside the golgappa top with mint chutney and garnish with aloo bhujia.
- Place this golgappa on the shot glass and serve right away.
This is an excellent starter for cocktail or any party. best weekend snack just to sit back and enjoy some good old hindi movies and gobble some keema golgappas...what say?...:)
If you do not like aloo chaat it can always be switched out to jaljeera paani...or pudina paani

Chocolate Golgappas (Chocolate PaniPuri)

I must be honest the chocolate mousse and whipping cream are out of a box please dont judge me I will recommend you to try the same will post the product link and "taste-o-meter" at the end of this blog. If you want it to be authentic and all done by you I will have the link posted to my chocolate mousse recipe at the end.
I also chose to use oranges in this recipe to my luck I'm right in the heart of orange season and its in abundance. Chocolate and oranges is a classic combo we can always make compromises and use a banana instead of oranges.
Ingredients:
10 to 15 Hard Shell Papadi Golgappas
200 Grams Cooking Grade Milk Chocolate
1 Orange Peeled and De-seeded Segments
50 Grams Pack Blue Bird Chocolate Mousse
100 Grams Pack Blue Bird Whipping Cream
1 Cup Haldirams Salted Roasted Peanuts or Almonds
Chocolate vermicelli (Optional) for garnish
We also require fancy shot glasses to serve and mint sprigs if you fancy for garnish.
Method:
- Prepare the chocolate mousse and whipped cream ahead of time. truly these products are life savers simple instructions given and very easy to follow. how ever the one thing in chocolate mousse is i would alternate this recipe a bit and add 4 to 5 tbsp of melted chocolate mix and set it.
- Take the golgappa as the skin is hard we will have to create a cavity prior. using a serrated knife saw gently and create a cavity use the left overs to prepare papadi chaat.
- If there is a lot of salt in the peanuts use a sieve to shake out the excess salt and then use.
- Chop the cooking chocolate into chunks and add to a micro safe bowl place it in 30 second intervals keep stirring and melt it. took me 1 minute to melt the entire batch of chocolate.
- Take the peanuts in a bowl add few tbsp of chocolate mix well to coat and spread over a foiled sheet or oiled plate place it in the refrigerator for a minute.
- Remove the peanuts from the fridge and separate reserve in a bowl.
- I pierced a fork in my golgappa for grip to coat it with chocolate you can also use a bamboo skewer to coat the golgappa with chocolate.
- Pierce the other side of the golgappa using a fork please do this gently hold the golgappa in the left hand Using a spoon I coated the golgappa with melted chocolate and placed it on the foil and allowed it to set in the fridge. some extra hands will be an added advantage for this process.
- Once set add a few pieces of chocolate nuts as first layer then top with mousse and then the whipped cream now at this point you can either garnish with mint grated chocolate and so on I did garnish with the grated chocolate place the fruit of your choice and serve right away.
For adults create a trifle using the mousse and whipped cream in the shot glass chill it prior and just before serving create and place the golgappa on top and serve right away.
Awesome recipe for kids birthday party or anniversary pre planning and preparations will truly make things magical prepare my recipe for the next dinner party or just treat the hungry souls at home..they will truly enjoy and love it...

Re-Launch of Piri Piri Fries
This is the first time visiting the sahakarnagar branch normally when travelling for work I would always try and stop at kormangala or Indiranagar McDonald's so strange that have never been to the macdonalds located just 3kms from me.
The McDonald's Family Restaurant is a beautiful space for our tight niche community two level seating with pleather chairs and glass walls increasing the flow of natural light totally brightens the space Ambiance is hip and neatly maintained
As I'm writting this blog i was surfing on Mcdonald's Web page and found the nutritional value page quite surprised with the charts given there please click here and the nutritional PDF Chart if you also want to see what goes into the Mcdonald's burger. I've been a regular customer at McDonald's never really paid attention when a burger is called as junk food and will never call food as junk as I consider food one step close to god and as a food blogger I've always respected and enjoyed food.
Once we settled down we placed our order of 3 Mc Spicy Chicken Burgers, 2 Mc Chicken Twist Burgers and 1 Bag of Piri Piri Fries 9 Pieces Chicken Nuggets and 1 Coffee Since it was winter we did not have any cold beverages or desserts for all this food it cost us only 945/-
Pili Pili or Piri Piri is Birds Eye Chilly this chilly is cultivated through out South-African. World famous Piri Piri marinate/seasoning, is made from crushed chillies, citrus peel, onion, garlic, pepper, salt, lemon juice, bay leaves, paprika, pimiento, basil, oregano, and tarragon. this is an amazing seasoning I have an original sauce bottle shipped from africa and season all my meats and fish in this sauce it tangy and absolutely yummy. McDonalds has truly captured the taste and authenticity of this seasoning its perfect and absolutely yummy on fries I also sprinkled some of this spice mix on Chicken nuggets and we enjoyed every bit.
Mcspicy Chicken burger has always been my favorite and enjoyed every bit the breading is crunchy spicy and loaded with lettuce totally recommend you to try this if you've not tasted before.
McChicken twist the patty is topped with tomatoes, cheese and onion sauce and oregano seasoning and sandwiched in a corn meal dusted bun. I felt the patty could have been a bit more spicy as per Indian palate is truly a filling burger.
As far as the Chicken Nuggets we enjoyed every bite...and loved the mustard and BBQ Sauce.

Zomato Foodie Meet @Windmills Craftworks Whitefield Bengaluru
Zomato Invited me for a foodie meetup at Windmill Craftworks. I got there by 7.30 and the space was packed. I loved the ambiance its equipped with a fully functioning Brewery in the back drop, the Library complimented by a rare selection of books, Jazz Theater and Restaurant.
We also got a chance to meet the brew-master who took us on a tour turns out all the ingredients used to create wonderful craft beers are shipped from Germany. I liked Hefeweizen it was light and crisp not to heavy on the palate next up was the IPA the blend and roast was awesome must try.

After a detail tour we finally settled down for scrumptious dinner and the service started for starters we enjoyed the pork ribs, chilly prawns, BBQ chicken drumettes, samosas, soy keema matar seekh kababs, nachos and onion rings...
I loved the pork ribs it was cooked to perfection, soy keema seekh kababs were okay chicken drumettes was spicy and juicy totally enjoyed with beer, onion rings had too much breading where as the nachos were too good enjoyed the re-fried bean sauce..

Review- Khandani Rajdhani Indian Vegetarian Thali @Koramangala Bengaluru
I'd pre booked my table and good thing to do as it was a holiday many people thronging the place with out booking were sadly made to wait. We reached rajdhani by 1.30 pm the house was packed some were in large groups friends and family were celebrating right from Christmas to birthday the atmosphere was truly electrifying and wonderful.
This is my 3rd thali at rajdhani I've enjoyed their summer meal, diwali thali and now winter thali. It was tastefully put togeather by the chefs and management. Rajdhani is under the flagship of Mirah Hospitality. Rajdhani is spread across 11 locations with multiple outlets in each state Bengaluru, Chandigarh, Chennai, Delhi NCR, Hyderabad, Mumbai, Nashik, Oman, Pune, Raipur, Shirdi.
The Ambiance is very simple, seating is comfortable for a break there were no flashy colored walls distractive pictures or posters very sober and neatly maintained space. The thali was quite elaborate with almost 15 dishes. cuisine was rajasthani and party gujurathi. what i really liked was they had placed a printed menu in the entry way and 345/- for this elaborate thali was amazing deal.
Service was awesome I'm really impressed with the sign language they use entire staff is trained to use sign language. On the lighter note I personally felt i was in a baseball field where sign language is a must but at rajdhani it was a race for food between waiters and managers making sure they fill up all the katooris and hot pulkas served in time...these guys truly know how to treat their guests.

The service started with Farsan which are starters.. Barsa dola, Dhokla , papdi chat and cheesy Khaman
Barsa dola was like a kachori the crispy skin and spicy stuffing along with pudina chutney and tomato chutney was really tasty. I liked my Dhokla with mirchi pickle it was quite spongy and very tasty. Papdi ki chat was bang on totally enjoyed..I've never tasted a cheese centered spicy Khaman before the taste and innovation was quite good.
After wonderful starters we were served Dhal Bati Churma the bati was quite rich as it was cooked on coals and then ghee it was crisp and very tasty along with the dhal all of it was washed down with chaas(buttermilk)
Then came the multiple sides for rotis, rice and Khichdi..starting with paneer maharaja, surthi undhiyo, aloo matar, tomato flower, 3 varieties of dhal, along with 2 kadhi
I loved the dhal the ghee ka tadka on dhal was amazing perfectly spiced and really tasty along with pulkas and methi thepla. Aloo matar had very less spice and did not enjoy this dish, tomato flower is nothing but cauliflower stir fried in spicy tomato sauce was quite bland and did not enjoy this side dish...maharaja paneer was tasty and very similar to butter paneer.
what i really enjoyed from the bread basket was the mini aloo ki parantha it was spiced to perfection and sort of deep fried in ghee amazing along with mirchi chutney.
surthi undhiyo is always been my favorite at all rajdhani outlets its prepared with 15 to 25 vegetable and greens and only served during winter this side dish is quite a treat for any vegetarian.
and finally desserts were moong ki halwa, semiya kheer, malpua with rabdi.. I had almost 3 servings of malpua it was so tasty the moong dhal halwa is very traditional sweet dish was rich and prepared to perfection...semiya kheer had no sweet in it was bit disappointing.

My 3 picks from the thali are Dhal Bati Churma, Aloo Parantha with Mirchi Pickle and Malpua with rabdi. I totally recommend visiting rajdhani atleast once its addictive tasty meal on a budget.
