Aam Ki Thali @Rajdhani Bengaluru


Rajdhani needs no introduction they are masters in creating wonderful thalis for every season. Past 4 summers during mango harvest Rajdhani has been creating a mango thali. The various mango based dishes in one plate to wow their guests this thali is on high demand during summer. 

Normally Rajdhani features dishes from Rajasthan and Gujarat this year they have featured many southindian dishes on their menu. Special south-Indian dishes which were featured are Mampazham kuzhambu, Maanga pachadi, instant Maanga urugai and Maanga Chutney.

In southindia during summer i.e April to June we harvest many varieties of mangoes there are specific variety of mangoes which are meant for pickles and preserves like Avakkai, Kili mooku and so on...

Apart from the raw variety south also harvests a wide range of sweet mangoes used for desserts and many savory dishes some famous and largely used verities are Chakara kutty(sugarbaby), Malgova, Neelam, Mallika, Banganpalli, Malgova, Badami, Raaspuri and Alphonsa. 

Alphonso Mango is also largely grown towards Rantangiri located in Maharastra is considered the king of mangoes. Stepping up a notch Rajdhani wants their guest to taste mangoes from rantangiri they order alphonso mango puree from ratangiri which travels all the way from ratnagiri to bangalore via rajdhani express train. On my recent visit to rajdhani I got to know the entire operations how they procure certain produce truly fascinated me.

Aam Raas
Aam Raas is a simple dessert served during mango season its nothing but pureed Alphonso mango served with poori a fried bread the crispy bread and mango puree is favorite dessert for every Indian

Aam Panna
Raw mango cooler. Prepared with kili mooku mango in south raw sugar is used to prepare this drink its truly an energy booster and enhances the appetite.

Mango Lassi
Mango lassi is a prepared with mango puree and yogurt. Yogurt is widely known for its healthy pro-biotics, its also  great source of nutrition during summer.

Potli Kachori
Money Bag looking fried dough is popular snack across Asia. In India we fill the money bag with lentils or locally grown veggies which are braised and then filled these kachoris were crispy and spicy and served with kandhari chutney. 

Chilly Samosa
Spiced Peas are stuffed inside a spinach and mint warp and deep fried served with a mango dipping .

Mango Launji
Mango Launji is a chunky chutney can be preserved for day and served with spicy biryani.

Kili mooku Maanga Instant Pickle
Kili mooku name meaning parrots beak this varity mango has a funny name but the flavour and taste of kili mooku mango is sweet and sour. This pickle cannot be stored, rather prepared and eaten under a weeks time. This instant Pickle compliments all southindian main course meals specially curd rice.


 Mango and Carrot Salad
Julienne carrots and mango are tempered with mustard and dry chilly packed with flavors this salad complimented dhal dhokli. 

 Mamphazam Kuzhambu
This is a typical southindian dish predominantly prepared in Tamilnadu and Kerela. Ripe sugarbaby mangoes are used in this yogurt based curry served with steam cooked hot rice. 

Thenga Maanga Chammanthi
Coconut and mango chutney is a typical south Indian dish served with steam cooked rice or breads we also prepare this chutney for breakfast and serve it for Idly and Dosa.

Kandhari Chilly Mango Chutney
Kandhari meaning birds-eye-chilly and mango are slow cooked and then pureed, the puree is cooked again and allowed to reduce, this chutney can be preserved and served for snacks instead of ketchup this chutney was fiery hot was excellent with samosas. 

Mango and Pineapple Salad

Mango Pulao
Raw mango is tempered and topped on jeera rice. This pulao and mango launji combination was one of a kind tasting.

Mango Jelabi with Cardamom Custard
Ripe and Fleshy mango like malgova chunks are dipped in a batter and deep fried to create this dessert and served with a cardamom custard. When mango is fried the aroma and taste enhances soft centered mango and crispy shell was a winner.


Combination of two different cuisines north and southindian infused and various dishes prepared with a seasonal fruit was the highlight of this event. 

None of the dishes were oily, well balanced meal get there hungry there is a lot to taste and make sure to save some room for dessert. 

Overall after tasting...I was satisfied with the spread got to taste both the cuisines. The Aam Ki Thali will extend till June make sure you taste your share. Truly an amazing spread.

Mutton Brain Fry (Bheja Fry) Recipe / Moolai Varuval


Mutton brain fry is prepared in many different ways across India. This brain fry recipe is typical southindian version prepared across north tamil-nadu.

Ingredients:
4 Pieces Mutton Brain
1 Onion Finely Chopped
5 to 6 Pods Garlic Chopped
1 Inch Ginger Chopped
4 to 5 Green Chilies Chopped
2 Sprigs Curry Leaves
2 Tbsp Fresh Coriander
1 Tbsp Chilly Powder
1/2 Tsp Turmeric
1 Tbsp Coriander Powder

Masala Paste:
2 Inch Pieces Coconut
1 Inch Ginger
10 Pods Garlic
1/2 Onion 
4 Chilies
1/2 Tsp Fennel
1/2 Tsp Pepper Corns
3 Cloves
3 Pods Cardamom
2 Inch Sticks Cinnamon
2 + 1 Tbsp Oil
Salt as per taste
Chopped Coriander, Lime Juice and Pepper Powder for garnish...

Method: Heat a fry pan on medium flame add 1 Tbsp oil once the oil is hot add 1/2 finely chopped onion, pepper corns, garlic, fennel, cloves, cardamom, ginger, garlic, cinnamon and chilies fry until the onion turn golden brown transfer to a mixer jar grind to form a smooth paste add splash of water if needed to grind the masala paste.

Place a wok on medium flame add 2 tbsp oil temper the oil with curry leaves and coriander once the curry leaves splutter add finely chopped onion, garlic, ginger and chilies fry till onions turn transparent.



Add the masala paste to the onion along with chilly powder, turmeric and coriander powder fry until raw flavor from the masala has gone.

Add salt to the masala if you want gravy add water to create gravy for dry masala add 1/4 cup water to the onion masala fry till oil separates.

Add brain to the masala toss to coat cover and allow to cook for 10 minutes with gentle hands stir and fry the brain until done dish out garnish with chopped coriander, pepper powder and lime juice serve hot with toast...Enjoy...:)

IDLY KURKURE RECIPE


I was in a mood to experiment on a new recipe the other day and happen to find these leftover Idly's in my fridge and finally ended up creating a dish called Idly kurkure. I was thrilled with my teatime snack dish turned out perfect we thoroughly enjoyed this dish.

Ingredients:
6 to 8 Idlis
1/4 Tsp Pepper Corns
1/4 Tsp Cumin Seeds
5 Pods Garlic
4 to 5 Dried Red Chilies
Fist Full Curry Leaves + 2 Sprigs Curry Leaves
1/4 Tsp Asafoetida
Salt as per taste
Oil for frying and tempering


Method: Chop the idly into bite size cubes. Preferably use leftover day old idly for this recipe they will not absorb extra oil while frying. 

Heat oil for frying in a wok on medium flame fry the idly cubes till it turns light golden in color. Drain the excess oil and place the fried cubes on a kitchen towel allow the excess oil to drain.

Heat a pan on medium flame add a tbsp oil temper the oil with asafoetida and 2 sprigs curry leaves allow the curry leaves and asafoetida to splutter a bit. Add the masala powder and salt as per taste toss the fried Idly garnish with lime juice and coriander...serve hot...Enjoy...:)

#Chickenfries @Burger King, Bengaluru

This might only happen in a dream to combine and create Chicken like French fries now this is what I call a brilliant idea. BURGER KING is letting love rule as it introduces Chicken Fries across India. The new menu item, which follows a recent successful re-launch in the U.S., is being supported by a love story campaign posted on social media.  

For the past couple weeks I was so intrigued with all the promotional love pics which were constantly posted by burger king on their facebook and Instagram….I was like what is this deal about  and then I finally happen to catch-up on the love story posted in tumblr.


The love story was so cute, humorous, and seems straight out of a bollywood flick. This is a love story between world famous burger king fries and daughter of whopper. Like all love stories the dad was bit over protective of his daughter eventually the irresistible fries and chicken eloped and married to live happily ever after. When ever MOD has new offerings they always make sure to ask me if I would like to taste some and without fail send me their seasonal gourmet donuts. I truly appreciate the dedication and love this team has they offer one of a kind donuts to consumers. 

They use a special variety flour mix for donuts its all sourced from Singapore apart from the flour these donuts do not have any eggs I always look for egg free snacks at home few of us are allergic to eggs and we keep purchasing their donuts as a tea time snack. 

Each and every donut is unique they are all dipped and decorated by hand none of these donuts are machine made. The batch of donuts are  not frozen none of these donuts are preserved over night its all freshly made.


To serve a super soft donut micro wave for 8 seconds they are the fluffiest bite of goodness you'll ever taste. I got to taste The mocha  truffle, Vanilla Cheese Cake, and Salted Caramel Donuts.

Over all I liked the creation and construction of all the 4 donuts my pick from the four offerings are the mocha truffle donut this donut had the perfect amount of sweet the bun was fluffy the truffle bits on top were gooey totally satisfied my craving.

Steam Cooked Bao Buns Chinese Recipe


BAO BUNS are slowly becoming a fast food trend across Bangalore and India. Since these buns are steam cooked and served with a spicy meat filling everyone seem to enjoy the soft buns and spicy filling combination. 

How and where did these BAO BUNS originate? According to legend, BAO or BAOZI were invented by a Chinese scholar and a military strategist Zhuge Liang during Three Kingdoms period in 3rd century AD initially these buns were served with a piping hot soup to the sergeant.


These buns can be served with any filling even a sweet filling like fruit and icecream its yum. My choice of filling would be mutton ghee roast and prawn chettinad. To create super soft and fluffy bao try to use a bakery grade flour for this recipe you can find bakery grade flour at bakery supply stores.

INGREDIENTS For BAO BUNS :
3 Cups Sifted All Purpose Flour (Maida)
1 Tbsp Yeast
1 Tbsp White Vinegar
1 Tsp Salt
1 Tbsp Sugar
1 Cup Luke Warm Water 
2 Tbsp Oil

Method: Activate the yeast first. In a bowl add sugar and luke warm water add the yeast and mix well once the yeast doubles start kneading the dough. Combine milk powder, vinegar and all purpose flour add the activated yeast to the flour and start kneading to form a soft dough add water if needed to create a soft dough. 

Add oil to the dough and knead for 15 minutes or until the dough is soft. Cover the dough with a plate or a towel allow to proof and ferment on the kitchen counter.

Once the dough has doubled in volume knead one last time start forming lime size dough balls dust with flour and roll out to 1/8th inch thickness apply oil and fold. Place the bao on a plantain leaf.

Add water to a wok place steam cooker or we can also use idli container and cooker to steam cook these bao. Once the steam builds place the bao and steam cook for 10 minutes or until done.


INGREDIENTS to CREATE CHICKEN IN BLACK BEAN SAUCE:
250 Grams Chicken Tenders (Breast meat)
1 Tsp Butter + 1 Tbsp Oil
Finely Chopped 1/2 Onion, 10 Pods Garlic, 1 Inch Ginger and 3 Chilies
1 Tsp Pepper Powder
1 Tsp Soya Sauce
1 Tsp Black Bean Sauce
Salt as per taste...

Method: Start with chopping the chicken into bite size cubes wash drain the excess water in a colander and reserve...

Heat a wok on medium to low flame add butter and oil once the oil heats up add the chopped onions, ginger, garlic and chilies fry till the raw flavor has gone and the onion should turn transparent.

Add the chicken to the onion masala fry a bit add  a pinch of salt and keep frying for 2 minutes once the meat turns pale in color add pepper powder, soya sauce and black bean sauce toss the meat in the sauce check for seasoning and add if needed. Check if the meat is cooked once the meat has cooked reserve.

Chicken tenders cook fast it hardly takes around 5 minutes to create this dish. This chicken in black bean sauce can be served as side with garlic noodles or fried rice. This recipe is excellent filling for Bao...We can also use chicken sausages cut into bite size pieces instead of chicken tenders...


Once the Boa bus are steam cooked we can start serving them filled with meats, mushrooms or veggies of our choice. To construct a bao...fill the bao with meat top with julienne carrots and onions and serve hot...Enjoy...:) Prepare Bao ahead of time and freeze them to create quick bao meal when ever your in a rush.

Mushroom Crostini Recipe


Crostini meaning an Italian appetizer along with bruschetta, crostini are thought to originate in medieval times when it was typical for Italian peasants to eat their meals on slices of bread instead of using ceramics.  Mushroom Crostini is a filling snack for summer. These crostinis can be served with or without cheese either ways they are yum.


The type of mushrooms used in this recipe are button mushrooms. Button Mushrooms are popular in India and are easily available at any gourmet store's vegetable aisle. Listed below are the benefits of mushrooms that we never knew.

Mushrooms are a good source of B vitamins which also play an important role in the nervous system.
Mushrooms are also a source of important minerals. Potassium is an important mineral found in mushrooms. It aids in the maintenance of normal fluid and mineral balance, which helps control blood pressure.

They help to strengthen the immune system as well. Mushrooms provide ergothioneine (which is a naturally occurring amino acid) a naturally occurring antioxidant that may help protect the body's cells.

Mushrooms are the only source of vitamin D in the produce aisle and one of the few non-fortified food sources often grouped with vegetables, mushrooms provide many of the nutritional attributes of produce, as well as attributes more commonly found in meat, beans or grains.

Mushrooms are low in calories, fat-free, cholesterol-free and very low in sodium, yet they provide several nutrients that are typically found in animal foods or grains.

Ingredients:
1 French Baguette or We can also use Indian Bakery Rusk for this recipe.
1 Large Onion Finely Chopped
3 to 4 Pieces Sun Dried Tomatoes Chopped
3 Green Chilies Chopped
1 Tsp Thyme
1 Tsp Pepper Powder
5 Pods Garlic Chopped
2 Tbsp Olive Oil or Butter
Salt as per taste
Cheese Spreed

Method: Wash and pat dry mushrooms. Cut the mushrooms into quarters and reserve. Place a wok on medium flame add butter once the butter foams a bit add garlic and fry a bit add chopped onions, chilies and sun-dried tomatoes fry till the onion turns pink in color.

 Add the mushrooms and fry on low flame until the mushroom reduces a bit. Once the mushroom has reduce and cooked all the way add salt, pepper and thyme toss and fry for a minute. 

Slice and apply butter to the baguette  heat a pan and toast the slices. Arrange the toasted slices on a serving plate and apply cheese spreed top with mushroom and garnish with coriander and mint serve hot...Enjoy...:)

The mushroom masala is also excellent to prepare cheese toast and also quesadillas. The French Baguette are very tough to slice get them pre cut from the bakery...I purchased Baguette from #Moremegastore

Fried chicken is always my favorite five star chicken prepares one of the best fried chicken on a budget its one of those snacks that can never go wrong my favorite and must try are thai crispy and crunchy masala.

Burgers: Hungry Bird burger and Yummy Veg Burger

This was my first time tasting veg burger from five star chicken I loved the burger, crispy potato patty was perfect enjoyed every bite.

Overall The hot dogs were juicy and filling I liked the fact that five star chicken is offering best hot dogs one can get in town at an affordable price point.
